For a start, all jobs are day jobs when you think about it. 24 hours in a day, 7 days in a week. Then you have the rhyme 30 days hath September, April, June and November etc. And to top it all, the days of the week end in day not night ie: MonDAY, TuesDAY etc.

In New York, actors work a day job, while they work theater. At some point, when they feel financially secure, they QUIT their day job. So this is really a New York City term.
Many acting positions for THE MOVIES and television that are offered to actors in Los Angeles are in fact, DAY JOBs, so they work regular night jobs. So it would be appropriate to say "Don't Quit your Night Job".
