both will mark up really fast. Neither is reccommended.
I like the look of wood (like butcher block) but you will have to sanitize thoroughly and not just wash.
Stainless steel would be cool for an ultra modern place but as I said it does mark up fast , if you're okay with how it looks marked up then go for it.

I would be afraid to use a wood work top because over time it will absorb food and have a lot of bacteria. You could use bleach to clean, but would probably ruin the wood. Stainless steel would be a better choice for cleanliness. You would have to be careful not to scratch it. I would check into other types of work surfaces before I made a choice.

Stainless steel if your kitchen is ultra modern, but keep it clean or it will look awful. Wood worktops in a country type kitchen work well...

I have granite worktops... pricey but worth it.

Solid wood stainless steel make it very industrial looking plus they will go out of fashion quicker than wood as wood is a classic.

Stainless steel is great. Its easy to keep clean, hygienic and long-lasting. I prefer it to wood because wood can get scratches and cracks in it over time which can harbour germs.

Stainless steel if you can afford it. There are lots of reasons why professional kitchens have nothing else.

Neither...Stainless steel scratches easy and wood can trap dirt.

I have a stainless steel exhaust on My 2.5L straight six, there's no extra power, but the car now sounds like it should.

I'd mix them unless it is a tiny wet-bar sized kitchen. Updated kitchens mix textures, cabinet styles and heights these days. It's what's happening.
