Give them a sandwich bag and have them fill it with treasures from a nature walk. When you get home, you can make an art project out of the things they found. Buy a cheap photo frame and have them decorate it with the nature stuff, then just add a photo from the trip and they can keep it in their room. Have fun!

If money is not an issue, go to a dollar store and pick up a bunch of cheap toys that they like. Play races, such has, egg races,
Put an egg on a spoon let them walk with it to the finishing line. This helps with learning balance. Do three legged races. and so on. Also crafts is a big hit with my kids.

Bird Watching (take binoculars)
Building fire - obvious (ghost stories)
If there's a lake - skipping stones
Walk at night with a flashlight and look for little creepy crawly creatures hiding in the bushes (watch out for snakes)
You could buy an inexpensive night vision scope to look for animals at night.
Look for bigfoot

My favourite part of camping has always been the campfire each night...roasting marshmallows and/or weiners. It is also fun if someone plays guitar and people can sing.

During the day...swimming, exploring, shopping (gift shops), tourist traps, etc.

Hiking, swimming, fishing, canoeing, nature exploration and photography, tree and wildflower identification, toss the football or frisbee, just lay out in the sun and relax.
