Cats are creatures of habit and familiarity, set schedules and routines, and any change in this upsets their balance. Are you watching her in your own home? If so, this may be causing some of the problems for her as your house has different smells and textures from her own. If you are watching her at mom's house, that is the most ideal situation as she will be in familiar surroundings and the adjustment will be far less difficult.
New people also can make a cat act shy. If you are in her environment remember you are in her territory and she may feel like you are intruders. Consequently, she is shy and removed from you. If she is in your home she may feel both threatened by you and the different environment because it isn't filled with her scent. Additionally, because you don't smell like her "mom", your mother, she doesn't recognize you. As you know our cats mark us with their cheeks to claim ownership of us and she simply doesn't know you. Perhaps the different tonal qualities of your voices freak her out (especially hubby's, if he has a deep voice), and this is the problem.
Let her come to you and don't force it. Cats are funny creatures at times - ignore them and they will clammer for your attention. Push them too much and they will stay away. Go easy and you may find her sitting on your lap sooner than later.

Cats are very picky animals. Some cats like everyone, others only may like one specific person. It could also be the cat is shy. I wouldn't push it...try giving the cat a treat if she takes it, great! If not, just give her time.

I have a Siamese Himalayan and he is a one owner cat. He is mine and loves only me. Other people always want to touch him and pet him. While he does not run away from them, he will shy away and not let them get close enough to touch him. Let her decide when it's time. I would not make sudden moves, or noises around her, and let her know she can trust you. It takes time, but the Himalayan is one of the most lovable cats I have ever had.

It might just take awhile, but it might not happen before your mom returns. My cat warmed up in a matter of days, my sister's cat took about 3 weeks.
