Strawberry Cheesecake
1 1/2 cups graham cracker crumbs
2 tablespoons sugar
3 tablespoons margarine or butter, melted
Filling
19 ounces cream cheese, softened
1 cup sugar
2 teaspoons lemons, rind of, grated
1/4 teaspoon vanilla
3 eggs
Glaze
1 cup strawberries, mashed
1 cup sugar
3 tablespoons cornstarch
1/3 cup water
Pre-heat oven to 350 degrees Crust: stir together graham cracker crumbs and sugar.
Mix in butter thoroughly and press into a 9" springform pan.
Bake 10 minutes.
Cool Reduce oven temperature to 300 degrees Filling: beat cream cheese in large mixing bowl.
Gradually add sugar, beating until fluffy.
Add lemon peel and vanilla Beat in eggs one at a time. Pour into shell.
Bake 1 hour or until center is firm.
Cool to room temperature and then spread with the strawberry glaze. Chill 3 hours.
Glaze: blend sugar and cornstarch together in a small saucepan.
Stir in water and strawberries.
Cook, stirring constantly, until the mixture thickens and boils.
Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.

I have a really yummy recipe that a friend gave me. It's a baked cheesecake but my husband likes the no-bake kind better so sometimes I'll fix that kind.
Baked Cheesecake
Pre-heat the oven to 300 degrees
For the Crust
1 pack graham crackers (crushed)
2 tbs sugar
1/4 cup melted butter
Crush the graham crackers. Spread them in a spring form pan with the 2 tbs sugar then pour the melted butter over and make a crust. You'll have to mix it all together and pat it down in the bottom of the pan.
For the cake (Small-Med Size)
3 8oz packs of cream cheese (softened)
1 1/4 cups sugar
1 tsp lemon juice
1/4 tsp vanilla
3 eggs
(for a large cake add one more..... and get a way bigger pan)
Mix all these together until smooth and pour over the crust you have made and pop into the oven for 1 & 1/2 hours.
No Bake Cheesecake
1 graham cracker pie crust
1 container of cool whip
1 8oz package cream cheese (softened)
1 cup powered sugar
1 can of cherrys, strawberries or whatever you like on top.
Whip the Cream cheese, cool whip and powederd sugar together untill smooth and creamy. Pour into the pie crust and refridgerate for a few hours.

CHEESECAKE:
Graham cracker crumbs
1 lb. small curd cream-style cottage cheese
(use as dry a cream-style variety as possible)
2 (8 ounces) packages cream cheese, softened
1 1/2 cups sugar
4 eggs, slightly beaten
1/3 cup Argo cornstarch
2 Tablespoons lemon juice
1/2 cup margarine, melted
1 (16 ounces) pint sour cream
Grease 1 (9-inch) spring form pan; dust with graham cracker crumbs. Preheat oven to 325 degrees. Sieve cottage cheese into large mixing bowl. Add cream cheese. Beat with high speed of electric mixer until well blended and creamy. Beating at high speed, blend in sugar, then eggs. Reduce speed to low. Add cornstarch, lemon juice and vanilla. Beat until blended. Add melted margarine and sour cream. Blend with low speed. Pour into prepared pan. Bake in 325 degrees (slow) oven about 1 hour and 10 minutes or until firm around edges. Turn off oven. Let cake stand in oven 2 hours. Remove and cool completely on wire rack. Chill. Remove sides of pan.Makes about 12 servings.

ONE PINT OF SOUR CREAM.....5 BARS OF CREAM CHEESE.....1/2 DOZ. EGGS...1 CUP SUGAR 1/4 CUP OF FLOUR...1/2 TSP BAKING PWDR... SOME FINELY GRATED ORANGE PEEL ABOUT 1/2 TSP.....TWO TSP VANILLA EXTRACT.....BLEND TOGETHER......WE USE GRAHAM CRACKER CRUMBS AND MELTED BUTTER AND PRESS INTO BOTTOM OF A SPRING FORM PAN AND BAKE FOR A MINUTE OR TWO....PUT IT IN THE FRIG. TO SET UP THE CRUST.... WE USE A SPRING FORM TUBE PAN...THEN POUR IN THE REST....BAKE AT 350 FOR 20 MINUTES...REDUCE THE HEAT TO 325 FOR ONE HOUR....LET IT COOL COMPLETELY AND POUR PINEAPPLE PIE FILLING....OR BLUE BERRIE PIE FILLING...OR CHERRY PIE FILLING OR YOU CAN SECTION IT OFF AND MAKE IT ALL THREE TOPPINGS....ITS ALWAYS BETTER THE NEXT DAY....AFTER ITS BEEN REFRIGERATED...FEEDS AN ARMY OF RELATIVES
