Three Cheese Cavatini
1 lb uncooked rigatoni pasta (or similar shape pasta)
28 ounces spaghetti sauce (or use your own, you may need more if you like it saucy)
8 ounces mushrooms, sliced
1/4 cup chopped onions
3 garlic cloves, minced
2 tablespoons olive oil
1 cup diced pepperoni (or sliced pepperoni)
2 cups low fat cottage cheese
2 cups part-skim ricotta cheese
1 egg
2 cups shredded mozzarella cheese
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon oregano
1/2 teaspoon nutmeg
salt and pepper
Preheat oven to 350°F.
Cook pasta according to package directions to "al dente".
While pasta is cooking, saute mushrooms, onions and garlic in olive oil until tender, remove from heat to cool, do not drain.
Combine cottage cheese, ricotta, egg, herbs and seasonings.
Mix cooked pasta with sauce and sauteed onion mixture, and spoon half into bottom of 11" x 13" glass pan.
Spoon cheese mixture on top of pasta, spreading evenly to the edges. Put 1/2 cup mozzerella on top of cheese mixture. Place sliced pepperoni on top of cheese, then spread remaining pasta/onion/mushroom mixture, then mozzerella cheese.
Bake for 30-40 mins, until cheese is browning and bubbly. Allow to rest at least 5 mins before cutting.

Here is the secret recipe that was always served at our annual Christmas party and everyone loved it. They are easy to make and best served warm.
Bourbon Dogs
Combine:
2 cups catsup
¾ cup bourbon
½ cup dark brown sugar
1 TB. onion, grated
Mix in:
1 lb. Hillshire Farm Cocktail Links
Simmer sauce over low heat for about 1 hour. If mixture thickens too much, thin with additional water or bourbon. Can be made in a crock-pot on medium setting until simmering, reduce to low for about an hour. Keep warm while serving.

Barbecued Meatballs
Ingredients Meatballs
3 pounds ground beef
One 12-ounce can evaporated milk
2 eggs
1/2 cup chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon pepper
2 teaspoons chili powder
1 cup oatmeal
1 cup cracker crumbs or bread crumbs
Sauce:
2 cups catsup
1 cup brown sugar
1/2 teaspoon liquid smoke
1/2 teaspoon garlic powder
Meatballs: Mix meatball ingredients together and shape into balls, about the size of a walnut. .
Sauce: Combine ingredients, pour over meatballs in baking dish, and bake at 350 degrees for 1 hour.
Apple Baked Beans Recipe
INGREDIENTS:
3 (16-ounce) cans pork and beans, drained
1/2 cup prepared barbecue sauce
1 medium sweet onion, chopped
2 Red Delicious apples, peeled, cored, and chopped
1/4 cup yellow prepared mustard
6 slices lean center cut thin bacon, cut into 1-inch pieces
PREPARATION:
Preheat oven to 375 degrees F.
Combine beans, barbecue sauce, onion, apples, and mustard.
Pour into a glass baking dish. Top with bacon pieces.
Bake for 45 minutes. Remove from oven and stir in bacon pieces. Return to the oven and bake an additional 30 minutes. Let rest 15 minutes before serving.
Make this baked beans dish in advance, if you wish. Reheat in a 350 F oven about 30 minutes until heated through. Recipe may be doubled, but adjust baking time upward accordingly.
Yield: 10 to 12 servings

Chili's Boneless Buffalo Wings--
This is a copy cat recipe from Todd Wilbur and his Top Secret Recipe site. I made these for my husband and I and they are just like the ones from Chili's. So good, I am sure you will enjoy them. It is a little time consuming but worth every second.
1 cup all-purpose flour
2 teaspoons salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1 egg
1 cup milk
2 chicken breast fillets
4-6 cups vegetable oil
1/4 cup hot sauce (Crystal or Frank's Louisiana)
1 tablespoon margarine
On the side
Bleu cheese salad dressing (for dipping)
Celery ribs
Combine flour, salt, peppers and paprika in a medium bowl.
In another small bowl, whisk together egg and milk.
Slice each chicken breast into 6 pieces.
Preheat 4-6 cups of vegetable oil in a deep fryer to 375 degrees.
One or two at a time, dip each piece of chicken into the egg mixture, then into the breading blend; then repeat the process so that each piece of chicken is double-coated.
When all chicken pieces have been breaded, arrange them on a plate and chill for 15 minutes.
When the chicken is done resting, drop each piece into the hot oil and fry for 5-6 minutes or until each piece is browned.
As chicken fries, combine the hot sauce and margarine in a small bowl.
Microwave sauce for 20-30 seconds or just until the margarine is melted, then stir to combine.
You can also use a small saucepan for this step.
Just combine the hot sauce and margarine in the saucepan over low heat and stir until margarine is melted and ingredients are blended.
When chicken pieces are done frying, remove them to a plate lined with a couple paper towels.
Place the chicken pieces into a covered container such as a large jar with a lid.
Pour the sauce over the chicken in the container, cover, and then shake gently until each piece of chicken is coated with sauce.
Pour the chicken onto a plate and serve the dish with bleu cheese dressing and sliced celery on the side.

A dessert, 2 tubs of cool whip, 2 boxes of jello instant pistachio pudding, a bag of small marshmallows, a can of crushed pineapple, and 1/2 cup sliced almonds, Toasted optional. Prepare the pudding according to the box recipe, using 1/2 the milk. add to this the cool whip, the drained pineapple, 2 cups small marsh mellows, and almonds. Make in advance, a let sit overnight.

Depends on if you want to be impressive or not.
Dips are always easy, and you can always go store bought. If you want to "fancy it up," get a nice fresh baked loaf of bread. Hollow it out like a bowl. Dump the container of dip into the bread bowl and tear up what you scooped out to use for dippers.
Also, a really easy dip to actually make is:
Combine one softened cream cheese, 1/2 to 1 packet of ranch seasoning (the kind you buy for salad dressing or dip), one jar of artichoke hearts (drained and chopped up) and one jar of roasted red peppers (drained and chopped up). Serve it with wheat thins. (sounds a little weird, I know, but its very good and always gets people asking for the recipe.)
Or, if you really don't want to bother, just go to the store and buy one of those prepared veggie trays that come with dip or a cheese and pepperoni platter.

Seventh Heaven Garlic Dip
1 500ml container of sour cream.
Add 1/2 a package of dried onion soup mix
2 or 3 drops of tabasco sauce
1 teaspoon of minced garlic (best to get the pre-chopped stuff which you'll find in grocery store- saves on time)
1/2 large onion (usually Vidalia, white or sweet) chopped finely.
Mix it all up, cover and place in fridge to allow flavours to mingle. And it's best to make it hours ahead. Feel free to adjust quantities to suit your own taste buds.
Serve with chips, potato skins, chicken wings...It's my favourite dip from a restaurant which no longer exists...this was their signature dip.

CORN DIP
3 cans Mexicorn, drained
1 small can green chilies
1 ½ cup mayonnaise
1 ½ cups sour cream
1 cup chopped jalapenos
16 oz. Mexican shredded cheese (the one that has jalapenos in it)
Mix together the mayonnaise and sour cream first, then add the other ingredients.
Serve with fritos.

PINEAPPLE CHEESE BALL
16 oz. softened cream cheese
½ tsp. Accent
½ tsp. garlic salt
½ tsp. finely chopped onions
¼ cup finely chopped green peppers
¼ cup well-drained pineapple
1 cup chopped pecans
Mix all ingredients except pecans. Form into a ball and put in refrigerator until firm. Roll in nuts.

DILL DIP AND BREAD BOWL
1 round loaf bread (unsliced) - I like the dark pumpernickel
For the dip:
1 cup real mayonnaise
1 carton (12 0z) sour cream
2 Tbsp. parsley flakes
2 Tbsp. onion flakes
2 tsp. dill seed (not dill weed)
2 tsp. bon apetit (McCormick brand seasonings)
Mix dip ingredients together (can use immediately, but is much better if you make a couple hours ahead and chill)
Hollow out bread to make a bowl and tear into bite-sized pieces. Pour dip in bread bowl and arrange bread pieces around bowl to use for dipping.

Drain grease and throw into crock pot
add salsa to your taste
add Velveeta cheese the whole block cut it up in pieces
Put on low until melted stir often
