I want to cook a romantic dinner for my husband tonight. What is something that I could fix that would be really good. Not steak and baked potato. We have that every week. I want something really unique, but fairly easy to cook.

Linguini with Italian red sauce, with fresh roasted garlic in the sauce. (Garlic is an aphrodesiac) Some fresh green string beans, served with a garlic butter sauce. Serve with some red wine, and for dessert have chocolate mousse.

Seafood Linguini With White Wine Sauce
We were craving shrimp and white wine sauce on night, and this is what I came up with. Bay scallops were on sale at the store, so I threw those in too. Please feel free to use any white wine you like. I happened to have a nice bottle of savignon blanc on hand, and it worked just fine. As a matter of fact, it tasted amazing. Note on the sea salt: I have some Tuscan flavored sea salt which is what I used for seasoning. If you don't have a flavored salt, please feel free to add some dried spices to taste such as dried italian spice or a little rosemary. This also tastes great reheated the next day after the pasta absorbs more of the sauce.
1 lb linguine
1 lb shrimp, peeled and deveined
1/2 lb bay scallops
2 tablespoons extra virgin olive oil
3 tablespoons garlic, minced
3/4 teaspoon crushed red pepper flakes
3 tablespoons butter
1 1/2 cups white wine (savignon blanc)
1 teaspoon lemon zest
sea salt (Tuscan Seasoned)
ground black pepper, to taste
fresh parsley, chopped, to garnish
4-6 servings

1. Cook linguini according to package directions.
2. In a large skillet over medium heat, warm the olive oil.
3. Add garlic and crushed red pepper and cook for a couple minutes until fragrant.
4. Melt a couple tablespoons of the butter into the olive oil and garlic, and add the shrimp.
5. Add the white wine and bring to a boil.
6. Reduce heat and simmer for another 3-5 minutes until wine reduces.
7. Add scallops, remaining 1 tbsp of butter and lemon zest.
8. Cook sea scallops for another couple minutes until just warmed through.
9. Season with salt and pepper to taste.
10. When pasta is cooked , drain and add to a large serving bowl.
11. Top linguini with the seafood an white wine and spinkle with the chopped parsley.
12. I like to let the pasta sit for a bit covered in foil to absorb some of the sauce before serving.


AND a nice bottle of wine!!!

Something I like to do that's romantic is make fondue. You have to buy a fondue pot - I prefer electric because it's easier to control the heat than on a sterno pot. You should be able to find one for about $20. For the appetizer, make cheese fondue - search the net for recipes. Dip bread and veggies in the cheese - sharp cheddar with a little beer, dry mustard, worchestershire, garlic added works really well. Add a little flour to shredded cheese to make it smooth before you add to a small amout of pre-heated beer. For the main course, you can fry steak cubes, chicken, or seafood - peanut oil is the best to fry in - or you can cook the meat in broth. You can dip the meat in storebought sauce - honey mustard or teriyaki works well for chicken, horseradish is great on beef. For dessert, make chocolate fondue - you can add caramel or liquor if you want. Dip strawberries, apples, pound or angel food cake, marshmallows, cherries, or use your imagination.
Of course, be sure to use lots of candles, your best dishes, a tablecloth or placemats, flowers (I cut some roses from my garden and floated just the flower heads in a pretty bowl with water in it.), and romantic music.

A romantic meal can consist of just about anything, it just depends on what your partner likes. For my partner it can be a peanut butter and grape jelly sandwich with chips and a coke, but what makes it romantic is the extra fu-fu I put on the table, like candles, rose petals, photos of the two of us and of course it doesnt hurt to look your best. If your partner is adventurous, perhaps have your meal in the car, boat, back yard, bathtub or bedroom.Have fun!

Orange Glazed Pork Loin

This is a delicious way to fix pork roast. Sometimes I make it without the glaze and it is still great. One of out family favorites.
I usually add a strawberry cheesecake for dessert.

5 lbs boneless pork loin roast, rolled
1 teaspoon salt
1 garlic clove, minced
1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
GLAZE
1/4 cup packed brown sugar
1 tablespoon cornstarch
1 cup orange juice
1/3 cup water
1 tablespoon Dijon mustard

Combine the salt, garlic, thyme, ginger and pepper; rub over the entire roast. Place roast with fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350* for 2 hours.
Meanwhile, in a saucepan, combine brown sugar and cornstarch. Stir in the remaining glaze ingredients until smooth. Bring to a boil; cook and stir for 2 minutes. Brush some of the glaze over roast.
Bake 1 hour longer or until a meat thermometer reads 160*, brushing occasionally with glaze. Let stand 10 minutes before slicing; serve with remaining glaze.

Strawberry Cheesecake

1 1/2 cups graham cracker crumbs
2 tablespoons sugar
3 tablespoons margarine or butter, melted
Filling
19 ounces cream cheese, softened
1 cup sugar
2 teaspoons lemons, rind of, grated
1/4 teaspoon vanilla
3 eggs
Glaze
1 cup strawberries, mashed
1 cup sugar
3 tablespoons cornstarch
1/3 cup water

Pre-heat oven to 350 degrees Crust: stir together graham cracker crumbs and sugar.
Mix in butter thoroughly and press into a 9" springform pan.
Bake 10 minutes.
Cool Reduce oven temperature to 300 degrees Filling: beat cream cheese in large mixing bowl.
Gradually add sugar, beating until fluffy.
Add lemon peel and vanilla Beat in eggs one at a time. Pour into shell.
Bake 1 hour or until center is firm.
Cool to room temperature and then spread with the strawberry glaze. Chill 3 hours.
Glaze: blend sugar and cornstarch together in a small saucepan.
Stir in water and strawberries.
Cook, stirring constantly, until the mixture thickens and boils.
Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.

Buy two Cornish game hens clean them and stuff them with uncle Ben's wild rice mix, season the hens and roast them basting them with orange marmalade. This is what my wife makes me and they are great. A side of veg and ice cream for dessert.
