Fried Chicken
1 lg. fryer, cut up
2 pkgs. dry Italian dressing mix
1 pkg. tomato flavored Cup-a-Soup
2 C. flour
1 stick butter
salt and pepper to taste
Preheat oven to 350 degrees. In large baking dish, place stick of butter. Melt. Place flour, Italian dressing, Cup-a-Soup, salt and pepper in a shaking bag. Be sure chicken is wet and place 2 pieces at a time in bag; coat evenly. Place chicken in baking dish and bake 50 minutes, turning after 25 minutes.

Chicken With Mandarines And Pomegranate
Yield: 4 Servings
2 Mandarines
1 Chicken
Sprigs thyme
3 Mandarines, juice only
Pomegranate, juice only
1 Pomegranate, quartered,
-seeds reserved
1 tb Butter, softened
1 tb Flour
Segment 2 mandarines, being careful to remove as much pith as
possible, and if possible remove the seeds.
Remove the fatty pads from the cavity of a chicken and put the
chicken in an ovenproof dish, preferably a glass chicken roaster to
maximise final moistness. Surround the chicken with the mandarine
segments and a few sprigs of thyme. Halve and juice 3 more mandarines
and pour the juice over the chicken. Juice half a pomegranate and
add. Season. Roast in a 190 C oven for about an hour or until the
juices run clear when the thickest part of the thigh is pierced with
a skewer. If not using a glass roaster with a lid, baste at intervals
during cooking.
Meanwhile cut another pomegranate into quarters and twist each wedge
to help free the seeds. Coax them out and reserve. Work together a
tablespoon of softened butter and a tablespoon of plain flour (to
make a buerre manie).
When the chicken is cooked, remove it and the mandarine segments to a
serving dish and keep warm.
Skim the sauce if necessary, then simmer it and add the beurre manie
in small pieces, whisking all the time until it is sufficiently
thickened. Taste the sauce for seasoning and pour over the chicken
and mandarines. Scatter the pomegranate seeds over the mandarine
segments and serve.

Spicy Taco Chicken
4-5 lb whole chicken
1 packet taco seasoning mix
1 Tbls Italian dressing (Kraft Zesty preferred)
1 lime
2 garlic cloves (peeled and pressed thru press)
1 large onion
2 Tbls butter
1 Tbls cilantro (optional)
Rinse off chicken and remove innards and neck . Pat dry with paper towels.
Mix Italian dressing , garlic, zest from the lime and butter together with a fork to form a paste and rub under skin of chicken making sure you don't break the skin.
Squeeze lime halves and rub onto outer skin all over the chicken then place limes in the carcass cavity. Tie chicken so wings and legs are close to the body and covering the cavity.
Sprinkle the taco seasoning over the entire outside of the chicken.
Cut Onion in large slices and place on cast iron skillet or large stainless steel pan that can go in the oven.
Place chicken on the onion slices and cook in 350 degree F oven for 1 to 1 1/4 hrs until skin is browned and juices are clear, not red or pink. Let rest for 15 mins and slice or shred with cilantro or parsley. You can make a gravy with the pan drippings.
Optional add 1/4 cup tequila to inner cavity of chicken with the limes.
Great with corn, black beans, rice and a green salad.
Chicken can also be shredded and served with grilled onions and bell peppers with tortillas for fajitas.

You know what's the easiest chicken recipe that is really delicious? Simply pour a jar of commercial salsa over several boneless, skinless chicken breasts with a little water. Simmer this over medium heat for about 20 - 30 min. You can serve this with rice or just about any potato. The sauce is wonderful and the vinegar in the salsa tenderizes the chicken so that you can cut it with a fork. Yummy and quick!

Chicken Cordon Bleu Casserole
2 pounds skinless chicken breasts, cut into chunks
Bread Crumbs
1 egg
1/2 cup milk
8 oz Swiss cheese, cubed
8 oz ham, diced
1 can (10 3/4 oz) cream of chicken soup
1 cup milk
PREPARATION:
Whisk together the egg and 1/2 cup milk. Dip chunks of chicken in egg mixture, then into bread crumbs, coating well. Brown in a little oil until golden.
Place chunks in baking dish, add cubes of swiss cheese and small pieces of ham.
Mix cream of chicken soup with 1 cup of milk; mix well and pour over all. Bake about 30 minutes at 350° or until tender and bubbly.

Chicken and Pasta
2 tsp oil
2 chicken breasts diced into bite size pieces
1 chopped onion
1 minced clove garlic
1 small red bell pepper diced
1 can chicken broth
1 can cream of chicken soup
1 cup water
1 1/2 cups frozen mixed vegetables
1 cup water
2 cups twirly pasta, egg noodles or spagetti
In a large pot heat oil then add chicken pieces. Saute until chicken has turned white. Add chopped onion and continue saute until it turns clear. Add garlic and red bell pepper.
Add chicken broth and bring to a boil turn down heat and simmer for 15 minutes. Turn heat back up and add water, chicken soup and frozen veggies. After it comes back to a boil add pasta and turn heat down low. Cook about 10 minutes until pasta is done.

take chicken put it in a baking pan.i prefer to use a cake pan.pour italian salad dressing over all the chicken and bake it in the oven for about two hours on 350 degrees.tastes deliciouse.its called italian chicken.and its good

boneless skinless chicken breast layer in a crockpot with hormel dried beef and covered with cream of mush soup.....is good but sound weird....cook slowly for 4-6 hrs...guaranteed hit
