Egg, Bacon and Hashbrown Casserole
This is not only for breakfast...it's great for any meal of the day. It's hearty and delicious and my family requests it often! Hope you try it :)
5-6 large eggs
1/2-1 lb bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1 (1 lb) package frozen hash browns or fresh hash brown potatoes (shredded "or" diced)
2 tablespoons vegetable oil
salt
pepper
5-6 servings
1. Have your bacon cooked and crumbled and set aside.
2. Place vegetable oil (or you can use bacon drippings) in a non-stick 12" skillet and heat over medium heat.
3. Pour potatoes into pan and press down evenly.
4. Fry about 10 minutes until underside is brown and crispy.
5. As carefully as you can flip potatoes over.
6. If you can't do this in one piece, try to do it in thirds or fourths, but try to keep them from falling apart.
7. Press potatoes down in pan evenly.
8. Make 5 to 6 two inch holes, or openings into the potatoes, evenly spaced.
9. Drop an egg into each hole.
10. You can add a little butter to each hole before dropping the eggs in, if you like.
11. Sprinkle salt and pepper over all.
12. Sprinkle bacon and then cheese evenly over top.
13. Cover until eggs are set.
14. Serve in pan with toast or bagels on the side and enjoy!

Sounds like an easy version of an Itallian fritatta. Potatoes on the bottom, meat (and veggies, if you wish) and finished with cheese & egg on top--which acts like a binder. I make them all the time (usually i cube the potatoes). Remember that the pan you use should have a handle that wont melt in the broiler!
I have never tried to do hashbrowns in the oven, so I would fry them until just done, sprinkle the quick-links (I would chop them for better distribution) then two beaten eggs with a little S & P pored on top (try to distribute it all over) until the egg is about 1/2 cooked. Add the grated cheese, if desired, and pop it into a preheated broiler to finish it-- about 2 minutes. The cool thing about frittatas is that the ingredient amounts don't have to be exact--everything to your taste. If you want to add veggies like onion, pepper, mushrooms, etc. or use a different meat, cube some potatoes (enough to loosely cover your pan-bottom) and add some procuitto or ham or some other and the veggies. Cook untill done and tender, then finish as above--GREAT way to use leftovers too!

1 lb russet potatoes
1/4 teaspoon salt
pepper
1/2 cup cheddar cheese (mild, medium or aged your choice)
2 green onions
Boil the potatoes until just barely tender, set aside to cool so you can handle them.
Grate the potatoes.
Spray a non stick skillet with veggie oil and place half the potatoes in it, sprinkle with salt& pepper.
Top with cheddar, green onions& bacon.
Add remaining potatoes, pat down.
Turn heat to high and cook about 5 minutes, shaking pan to keep the potato cake loose.
Using a spatula lift edges carefully to see when the bottom is golden brown.
Place a plate over the skillet and invert the pan getting the potato cake out in one piece, brown side up on the plate.
Spray the skillet with oil again and slide the potato cake back into the pan uncooked side down.
Cook about another 5 minutes.
Slide back onto a plate and cut into wedges.

My kids love this one, Shred a large russet potato, season with salt and pepper. preheat non stick pan 6-8" size and add 2 tablespoons of whole butter. add shredd potato to hot pan, lower heat to medium. Let the potatoes cook until golden brown flip potato and cook the second side the same, you may need more butter. Cook until tender. Place hash brown on plate, top with fried eggs, top with bacon or sausage, top with american cheese, melt under broiler micro or whatever you have avaliable. Cheese will melt from heat of the hot food if you cover it. I call this a hash brown sandwich!

This might be similar to the one that you had. You can omit the ground sausage and arrange links on top for effect you are looking for. I personally would add diced onions and peppers to you can use hash browns O'Brien which have them in them already.

1 lb. sausage
9 lg. eggs, slightly beaten
3/4 c. milk
1/4 c. melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese
Preheat oven to 350 degrees. Layer sausage on bottom of well greased 9"x13" pan. Add milk and butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake 1 hour.
Here's another:
Hash Brown Frittata
1 package (8 ounces) Bob Evans Express or Original Sausage Links
1 cup shredded cheddar cheese
6 eggs
1/3 cup whipping cream
2 1/2 cups Bob Evans Hash Browns
1/4 cup green and/or red bell peppers, chopped
1/4 cup chopped onion
1/4 teaspoon salt
Dash black pepper
Preheat oven to 350°F. Cut sausage into bite-size pieces. Cook in small skillet over medium heat until no longer pink in the center. Drain off any drippings. Whisk eggs in bowl; stir in sausage and remaining ingredients. Pour into greased 2-quart casserole dish. Bake, uncovered, 30 minutes or until eggs are almost set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.
Makes 6 servings

BREAKFAST CASSEROLE
3 c. shredded potatoes (or frozen hash browns)
1 lb. sausage
1 med. onion, chopped
1 c. grated cheese
8 eggs
2 c. milk
1 tsp. dry mustard
1/2 tsp. salt
Dash pepper
Brown sausage with onion, then drain. Butter 9"x13" casserole pan. Layer in potatoes (sprinkle with a little extra salt), sausage, and cheese. (Cheese will rise to top while baking.) Mix all other ingredients and pour on top. Bake in 350 degree oven for 40 to 45 minutes or until lightly brown.

Do a search, but there is a great hashbrown brunch pizza
recipe.. I think it is pampered chef.. anywoo.. you mix the
hashbrown ( thawed) with 1 egg, to make like a 'dough'
spread on a pizza pan or cookie sheet.. top with
sliced sausage links and cover with cheese. Bake like a
pizza! Yum!

i make a breakfast dish that is so simple. get a baking pan, hash browns on the bottom, then whatever meat over them, beaten eggs with a little milk, pour over the meat, then bake for about a half hour, when its almost done cover it with cheese.put back into the oven till melted.my favorite is ham and i ad mushrooms to it as well. quick and easy breakfast for everyone.

i just add a little extra virgin oil in a skillet brown the hashbrowns. then add my sausage, then eggs, stir it all up add my seasonings maybe a dash or so of salsa, top with lots of cheese,
it's good to go.

ok take the sausage and take it out of with casing and brown it nad scramble eggs and make hasbrowns cut up the hash browns and mix it all together and put it in totrilla shell
