im looking for the recipie that my nan used to cook, it was called pinacilty soup (not sure how u spell it though), it was made with large peices of veg and lots of potato with cornbeef. does anyone know this recipie and how to cook it please? thanks.

Pan Haggerty
450g (1lb) Potatoes
110g (4oz) Cheddar or Lancashire Cheese
2 medium Onions
25g (1oz) Butter
1 tbsp Vegetable Oil
Salt and Pepper

Thinly slice the potatoes and onions and grate the cheese.
Combine the butter and oil in a large frying pan.
Remove the pan from the heat and place layers of sliced potatoes, onions and cheese, reserving a little of the cheese.
Cover and cook gently for about 30 minutes or until the potatoes and onions are cooked.
Pre-heat the grill five minutes before the end of the cooking time.
Sprinkle the reserved cheese over the top of the mixture, place under grill until the cheese is golden brown and bubbling.
Serve straight from the pan.

ive no idea but try this its lovely

Leek and Potato Soup
Serves 4

8 Leeks
4 Potatoes
1200ml (2 pints) Hot Water or Vegetable Stock
75ml (3 fl oz) Sour Cream
2 tbsp Butter
2 tbsp Flour
Chopped Chives
Salt and Black Pepper

Slice the white parts of the leeks.
Peel and chop the potatoes.
Melt butter in large frying pan, sauté the leeks until tender, do not allow them to brown.
Remove pan from heat.
Sprinkle flour over leeks, and return pan to low heat.
Cook several minutes, stirring constantly, until flour is well blended.
Remove from heat.
Add hot water or stock, a little at a time, stirring constantly until blended.
Season to taste.
Add the potatoes, and simmer cook, partially covered for 20 minutes or until potatoes are tender.
Remove and puree in until smooth.
Stir in sour cream and serve.
Garnish with finely chopped chives.

Ingredients


2 to 3 medium sized Potatoes
1or 2 tins Corned Beef
1 tin Vegetable Soup
1 Stock Cube



Procedure

1. Peel & slice potatoes (quite thickly), put in a pan and boil for about 10 mins (not until they are fully cooked.

2. Slice corned beef and lay on the bottom of lasagne type dish.

3. Cover corned beef with a tin of vegetable soup.

4. Sprinkle a stock cube over the vegetable soup.

5. Layer potatoes over the top of it all.

6. Pour some water from the potato pan over the top to dissolve stock cube and just cover the potatoes.

7. Put in pre-heated oven at about 190º for approx. 30 minutes.

8. Serve with crusty bread & Enjoy!
