Apple Crumb Pie Recipe
INGREDIENTS:
9-inch pastry shell, unbaked, chilled
1 cup sifted flour
1/2 cup brown sugar, firmly packed
1/8 teaspoon salt
1/2 cup soft butter
6 cups peeled, sliced cooking apples
1/2 cup granulated sugar
1 teaspoon ground cinnamon
vanilla ice cream
PREPARATION:
Combine flour, brown sugar, salt, and butter; blend until crumbly then set aside. Combine apples, granulated sugar, and cinnamon; mix gently to coat apple slices. Pack apple mixture into chilled crust.
Sprinkle crumb topping over apples. Bake in 375° oven until apples are tender, about 50 minutes.
Serve this apple pie with vanilla ice cream.

Key Lime Pie
Graham Cracker Crust:
1 paper-wrapped package graham crackers (1/3 of a 1 pound box) or 1 cup plus 2 1/2 tablespoons graham cracker crumbs
5 tablespoons melted unsalted butter
1/3 cup sugar
Filling:
3 egg yolks
2 limes, zest grated (about 1 1/2 teaspoons)
1 (14-ounce) can sweetened condensed milk
2/3 cup freshly squeezed lime juice (if you get Key limes, use them: otherwise use regular limes)
Topping:
1 cup heavy or whipping cream, chilled
3 tablespoons of confectioners' sugar
For the graham cracker crust: Preheat the oven to 350 degrees F. Butter a 9-inch pie pan. Break up the graham crackers: place in a food processor and process to crumbs. (If you dont have a food processor, place the crackers in a large plastic bag: seal and then crush the crackers with a rolling pin.) Add the melted butter and sugar and pulse or stir until combined. Press the mixture into the bottom and sides of the pan, forming a neat border around the edge. Bake the crust until set and golden, 8 minutes. Set aside on a wire rack. Leave the oven on.
For the filling: Meanwhile, in a electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at a high speed until very fluffy, abut 5 minutes. Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer. Lower the mixer speed and slowly add the lime juice, mixing just until combined, no longer. Pour mixture into the pie crust. Bake for 10 minutes, or until the filling has set. Cool on a wire rack, then refrigerate. Freeze for 15 to 20 minutes before serving.
For the topping: Whip the cream and the confectioners' sugar until nearly stiff. Cut the pie in wedges and serve very cold, topping each wedge with a large dollop of whipped cream.

Hershey's Chocolate Pie:
6 Hershey's Bars Plain or with Almonds
16oz. Cool Whip
1 Chocolate pie crust (premade)
Melt all 6 bars in microwave for 1 minute. Stir and if necessary heat again till they are smooth, add 1/2 of the Cool Whip, mix well. Pour in pie shell, top with remaining Cool Whip. After this I usually sprinkle a few chocolate chips on top of the whip cream, just to make it look fancy. Refrigerate a least 4 hours or overnight.

Pecan Pie
1 cup corn syurp
1 cup sugar
3 eggs slightly beaten
2 tablespoons butter (melted)
1 teaspoon vanilla
1 1/4 cup pecan halves
1 9-in uncooked pie crust
Preheat oven to 350º F
Stir first ingredients
Fold in pecans
Pour into pie crust
Cook for a hour

Simple apple pie 6 baking apples peeled and cut in6 wedges mixed with the juice of 1 lemon so the apples don't turn brown. To this add 1 cup of sugar that has been mixed with 2 teaspoons of cinnamon. Place mix in store bought frozen pie shell. Brush the outer edge with water and place a thawed frozen pie top over apples. Crimp sides with fork so the top sticks to the bottom and poke a 1/2 inch whole in middle to allow air to escape. Brush top with egg wash, let sit for 5 minutes and brush again. Bake in center rack of oven at 375 degrees, 35-40 minutes until golden brown. Hint: Brushing top twice will help for better color, bake on preheated cookie sheet and it will make for a crispier bottom, and easier to cut.

Banana Cream Pie
1 banana
2 pkgs. (4-serving size) banana or vanilla instant pudding
1 baked 9" pie shell
2-1/2 cups cold milk
2 cups thawed cool whip
Slice banana into pie shell. Prepare pudding mix as directed on package for pie, using 2-1/2 cups milk. Fold in 1/2 cup of the cool whip and pour over the banana in shell. Chill at least 3 hours. Top with remaining whipped topping; garnish with banana slices, if desired.

APPLE PIE:
6 cups Cortland apples
2 tablespoons lemon juice
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
dash nutmeg
dash salt
1/4 cup flour
2 Tablespoons butter
1 unbaked pastry shell (9-inch)
Wash, peel, core and slice apples, toss apple slices in a large bowl with lemon juice to prevent darkening. In a small bowl combine sugar, brown sugar, cinnamon, nutmeg, salt, flour. Pour over apple slices and stir to mix well. Arrange apple slices in pastry-lined pie pan. Dot with butter and place top crust on pie, seal and flute edges. Cut slits in the top to permit steam to escape. Bake at 450 degrees for 15 minutes. Continue baking at 350 degrees for 45 to 50 minutes or until apples test soft with a fork and the crust is golden brown. Place a cookie sheet covered with aluminum foil on lower rack in oven to catch drippings.
PUMPKIN PIE:
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 1/2 cups pumpkin puree, canned or fresh
1 2/3 cups evaporated milk
2 eggs, lightly beaten
1 unbaked pastry shell (9-inch)
Combine sugar, salt, and spices in a large mixing bowl. Add pumpkin, evaporated milk, and eggs; mix well. Pour into pastry-lined pie pan. Bake at 425 degrees for 15 minutes; reduce heat to 350 degrees and bake 40 minutes or until center is set.

shorcrust pastryand add pumpkin mix cookin oven
