i can't decide what to put with the dumplings or even what way to cook them

1 whole chicken boiled saving the broth in the pot ( about 6 cups if not add water to broth)
after chicken is cool enough, remove meat from bone along with the skin.
salt and pepper to taste
Dumplings:

2 1/2 cups of flour in mixing bowl add enough water to make dough.........a clean floured surface. Roll dough with rolling pin and cut into squares.
Make sure the broth and chiken are boiling before placing dough pieces in. When the last one is dropped in, turn off stove. Serve
very good......I love to make and eat them.

An all time favorite:

CHICKEN AND DUMPLINGS

3 1/2 pounds chicken pieces
8 cups chicken broth

DUMPLINGS:

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter, cold
1/2 cup water

In a large wide pot, simmer the chicken pieces in the broth until the chicken is tender, 30 minutes or more. Remove the chicken and set it aside. When cool enough to handle, skin and bone the chicken and shred or cut it into bite sized pieces. If desired, skim the chicken fat off the surface of the broth. In a large bowl, thoroughly mix the flour baking powder and salt.

Using a food processor, pastry blender, or two knives, cut in the butter until it is the size of very small peas and distributed throughout the dry ingredients. Add the water and knead 8 to 10 times. If the dough seems too sticky, add a little more flour. Roll the dough out to 1/8-inch thickness and cut into 1-inch squares. Bring the broth to a rolling boil, drop in the dumplings, cover the pot and reduce the heat to simmer. Cook for 10 minutes or until the dumplings are cooked. Overcooking will cause the dumplings to fall apart.

To serve, place the chicken pieces in a bowl and ladle hot broth and dumplings over the chicken.

Ok, I'm a fluffy girl so here it goes:

Mix 2 cups of SELF-RISING Flour with a 1/4 cup of oil and 1/2 cup of milk and mix. Should be a soft dough consistency, if not add milk until it is.
Boil chicken with lots of seasoning, onions and celery. Take out the chicken (debone if necessary.)
Get the leftover broth to a roiling boil, add a couple of cups of milk and again get to a roiling boil. Drop a large spoonful of the dough into the boiling mixture, one at a time and don't overcrowd as they will double in size. Cover with a tight lid and let cook for about 10 minutes or until tender. You might need to turn down the heat a bit after adding the dumpling and covering to keep from boiling over quite so badly. Mine alwyas boils over and makes a mess but it is my price for dumplings!
Pour a spoonful or two of the 'juice' over the chicken and dumplings. Yum!

I have a great recipe for you it is called Alushki, its Polish.
Cut up a head of cabbage mix with a small hand full of onion and saute that in a large pot with 1/4 cup butter add salt and pepper to taste on about medium heat.
While that is cooking, for you dumplings bring a large pot of water to a boil with a couple dashes of salt, mix together 4 eggs with 1/4 cup water and a couple dashes of salt. Add enough flour so that you dough is sticky but not too thick and drop by spoon full into boiling water for a few minutes until fully cooked (they will float without sticking together when done, I usually cut one in half to make sure they are cooked thru.) Remove them from the water with a slotted spoon. When all your dumplings are done and your cabbage is fully cooked reduce heat to medium low, add another 1/4 cup of butter to your cabbage and add the dumplings to the cabbage and let that simmer together for at least 10 minutes the longer the better I prefer about 30 minutes.

Of course there is nothing better than Chicken and Dumplings but here is something my mom taught me. Take a quart of blackberries and add a cup of sugar and enough water to make liquid for the dumplings to cook in. Bring this to a boil and let boil for about 10 minutes. Than drop your dumplings in and turn down the heat to simmer and cover the pot. Cook for 10 minutes. Taste the liquid before adding the dumplings to see if it is sweet enough for your taste. If not, add more sugar.

PORK STEW WITH DUMPLINGS
A delicious pork stew with homemade cornmeal dumplings. Pork stew is cooked in the crockpot then finished with drop dumplings.
INGREDIENTS:
1 pound boneless pork shoulder roast, cut into 1-inch cubes
1 clove garlic, minced
1 tbsp. cooking oil
3 medium carrots, cut into 1/2 inch pieces, about 1 1/2 cups
3 medium potatoes, peeled and cubed, 2 to 2 1/2 cups
1 (12 oz.) can (1 1/2 c.) beer
1/4 c. quick-cooking tapioca
2 teaspoons sugar
2 teaspoons Worcestershire sauce
2 small bay leaves
1 teaspoon dried leaf thyme, crushed
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 large can (28 oz.) tomatoes, cut up
Cornmeal Dumplings, recipe below
PREPARATION:
In a large skillet over medium heat, brown pork and garlic in hot oil. Drain off excess fat. Meanwhile, combine all ingredients, except dumplings, in a 3 1/2 to 4-quart slow cooker. Stir in browned pork cubes.

stew cut up some different veg like carrots leeks potatoes boil them all add some oxo salt and pepper and your dumplings lovely
