Tin of Peaches,Sponge fingers and double cream.

Try a peach mousse...
Mash your peaches until almost puréed. (Keep the syrup)
lay the sponge fingers in the bottom of a pie plate... (You may soak them with a liqueur if you have it, or drizzle any of the following over them:a little sweetened coffee, or dilute some raspberry jam with a lttle of the peach syrup (this gives a nice flavour and colour contrast), or just the peach syrup itself if you don't have anything else.
Whip your double cream with a tablespoon of sugar until it keeps peaks, fold in the peach purée with a tablespoon of the syrup and whip another minute to blend, spread over your sponge fingers, and place in fridge for at least 2 hours before serving (or in freezer for 1 hour)

You can make a kind of trifle!!
Make them in individual serving glasses (preferrably glass, because then they look beautiful too!) Line the bottom of each glass with sponge fingers, then pour the syrup from the peaches all over the sponge fingers. Leave it to soak in, and whip them cream whilst you're waiting. place some peaches over the fingers, and top with a lavish dollop of the cream. (The cream doesn't have to be really whipped, just thickened and airy!)
I hope you enjoy it. (P.S. if you have any liqueurs or brandy you could pour that over the fingers too!)

Is double cream the same as whipped cream? Put the cakes in a bowl, put the peaches on top of them. Whip up the cream and spoon it on the peaches.

You can make what is called a "trifle" or "parfait" (pahr-fay'). If the cream is very soft or liquid, whip it until it is fluffy (be careful not to over-whip or it will curdle) You may have to slice the fingers if they are too thick. Layer the ingredients in a see-through bowl or glasses to get a nice effect: cake, fruit, cream, cake, fruit, cream. Chill in the fridge.

if u have gelitin in the pantry
soak gelitin in coldwater25gm
bring juice and fruit and 1/2 cup sugar to the boil
drain geletin and add to the mix and let cool
biscuit base
line the base of a tray with biscuits sprinkle a little sherry on top
when fruit mixture is cool enough pour onto biscuits let set
add whipped creamwhen all is set
serve bon appertit
