A piece of peeled ginger that you break up a bit with the flat of your knife, so it's still whole, but a bit 'bruised'. You get the flavour in your food/drink but no pieces.

michael & steve have funny answers, and lilly has it right, you need to smash the ginger so that the skin is broken and you sort of get the fibers exposed. you can use a mortar or a knife handle (give it a big whack!). Interestingly, ginger is also used to treat bruises, make a poultice of mashed ginger with water and place it on a cloth over your bruise. Btw, I love ginger, ginger ale, gingerbread, ginger cookies, raw ginger with my sushi, it's great stuff!!!
