Hi, I'm from Hong Kong, I speak Cantonese and luckily for you and infortunatle for me, we have to learn Putonghua here. You can e- mail me if you have more questions.
1. Most people speak Putonghua, there are many dailects though, you never know what you might be hearing in some obscure little villages. Some elderly might not be able to speak more than their own dialects. And remember, write Putonghua, not Mandarin. Mandarin is spoken in Taiwan, they are basically the same, but Taiwanese use these symbols and we use alphabets, it's much easier. I onced learnt Mandarin, but it drove me crazy with those symbols. People in Mainland China would write with Simplified Chinese while us Hong Kongs and them Taiwanese would use Traditional Chinese, if you check it up, you would see that the writen Chinese language has gone through quite a lot.
2. Well, we usually just say "hi", yes, in English. But some would say something like this, it's much more formal, in English, it's like this, Mister/ Ms. Sth, hello. In Chinese, 先生/太太/小姐, 你好.
3. Not much, body language is nearly the same everywhere. But when you greet them, leave off the hugs and kisses! A handshake for formal situations or a casual wave or a nod of the head, a smile would do fine as well.
4.Mister:先生, Miss:小姐, Mrs:太太, Male elderly:伯伯, Female elderly:婆婆, young child:小朋友, young childern or people of your own age, you can just say a friendly hi. There are different greetings for you own relatives though.
5. The Chinese like warm greetings but the Australians may be a bit too enthusiastic. So people are a bit too outspoken and the Chinese may think that's impolite. But there are some that are much more open to it. When it comes to translating, you can't do it word for word and sometimes there may not be milder words to put it or if you do, you may have twisted a bit of the original meaning.
6. Can you be a bit more specific?
Contact me, I might be able to answer more of your questions. I'd be gald to help you out on your project. Good luck with it!
One more thing, ni hao is hello, but ni hao ma is how are you. (It's Putonghua, but I guess you'd know by now.)
