fry onion. until golden in oil
fry coriander, cumin, chilli, tumeric, little ginger (all powdered)
fry garlic
add tin toms
cook till oil rises
add chicken
cook until chicken done
add salt pepper chopped corriander to taste
(stirr in green chillis fried in ghee if you like it hotter and richer)
can put potatoes or okra in if you like
spot on ! been eating it regular for years

Keep it simple and quick.
Chicken tends to dry out if cooked for long.
I mix chopped onions, chopped garlic,chopped chillies,and chopped capsicum in hot oil in a wok or pan.
Fry these together quickly. They soon start to smell delicious.
Then I add my curry powder. (no messing with a bit of this and a bit of that.
The smell just gets better.
Then I add my chicken pieces, chunks or whole legs depending on what I'm doing today.
Fry this lot, and if it looks a bit dry or the powders are sticking to the pan, add a little water, but only a little.
When you think the chicken is starting to cook, then you can add more water., enough to just cover the ingredients.
Bring to the boil, the simmer until it's just how you like it.
The tomatoes can go in anytime after the onions and garlic are cooked.
If I have a chicken stock cube toss that in too, but not always;
I also throw in mushrooms if I have any left over from previous dishes, and that applies to almost any vegetable, I also thow in a few frozen peas.
This is one of my favourite meals With boiled rice and cold beer.

if you go to oriental grocery store, there's a japanese curry stock in a box there. you should try it. it's easy and delicious.
you just need to add it to hot water.
