Depends on whether it's alone, or on a sandwich, or with wine, etc..
Alone I'd probably say a nice mild cheddar, or maybe a nice mozzarella (like string cheese!)
On crackers, maybe pepper jack or colby jack
On a sandwich it's a toss up between baby swiss and provolone
(kind of depends on the kind of sandwich)
with wine (again depends on the wine) I'd say probably gouda

mozarella and lacey swiss cheese... yummy - other than that I am just not a cheese fan - I did just try provolone recently and that is ok - it's weird though how sometimes if you skip cheese on something you normally get cheese on how you realize you can't even taste it - you are just eating the 15 grams of fat or whatever it is for fun. hmmm

Cheddar. No doubt about about it, Not crappy suffocated supermarket cheese though, Good farmhouse mature Cheddar, Something like applewood smoked cheddar or pilgrims choice mature would be appropriate.
I think it calls for a fix of cheese and bisquits accompined with anice glass of cider tonight.
