In many cases, seeds cannot sprout if they've not gone through the digestive systems of local birds. If the species of bird dies, the entire ecosystem is affected and eventually the plant dies out because they cannot reproduce. Many birds also pollinate flowers due to their pollen eating habits. Without them, many flowers would not be able to spread their genes and would either not breed at all, or would become seriously inbred. Parrots are important because they're the composters of the bird world. They strip fruit, take a bite then drop the food, which allows the fruit to either get eaten by other creatures that can't reach the food (thus spreading seeds), or the food rots to form compost for the plants below. They help keep the dirt and the trees they feed upon fertile.

Predatory birds are important at keeping rodent populations under control. Remove them from the scene and many animals will starve themselves due to overpopulation. Not only does that cause a problem for the rodents themselves, but the rodents can spread disease, eat the food other creatures depend on and basically screw up important eco systems. Vultures eat foods that would spread disease and clean up problem areas so it is safe for other animals. Ducks keep plant and insect growth under control.

If we ignore bird conservation, it affects everyone and everything. They control pests, keep plants in check and help spread seeds that would not be able to thrive without their help. Many plants depend on that one species of animal and when that bird species is gone, that entire ecosystem is doomed. In most cases there is no animal to replace that bird's job.
