You might have a disorder called celiac disease. People with this disease cannot tolerate foods that contain gluten, which is found in wheat, rye and oats. That does limit their carbohydrate intake, but they can tolerate potatoes and corn, as well as cereals and bread made from corn. Suggest that to your doctor, and also ask for a referral to an allergist so you can be tested for food allergies.

First, you definitely need to see an Allergist. What you're describing sounds like an allergic reaction, and it could get worse or be more serious than you think. Parachute has a good point too. I think she may be right on the money. See a doctor who specializes in these type of things. A nutritionist can also help. Most GP's have no clue about nutrition.
Also, read the ingredients on everything you eat and try removing wheat completely from your diet. Try other carbs like corn, rice or potatoes. Try to go for slower carbs like sweet potatoes and yams.
Also, find a new Doctor! Yours sounds like a total loss!

I too have developed this allergy in the last 2 years..But my throat constricts and I cannot swallow. I've tried to determine if its wheat or yeast or preservatives. Some wheat doesn't bother me and some I have a severe reaction to. Also had a very severe (throat constricted)reaction to raw mushroom, pecans and Thursday subway wheat bread. I barely eat any wheat or yeast type products now. and I ate mushrooms all of my life and now I am truly frightened by them.
The interesting thing with stopping carbs the craving goes away in a few days and you use very little butter, I've lost 15 lbs.

You may have something called siliac disease. Not sure of the spelling, pronounced like silly yak. It is an intolerance of wheat and other ingredients. My mother was told she had it, she really does not now, but there are tests you can be given to find out. Research this disease and find out. If you have it, you have to use gluten free foods. There are many gluten free recipes on the internet. I truly hope you can find some answers. IM me if you like.

Yes it's BAD! an allergic reaction is your body thinking it's a harmful substance. it may be only a scratchy throat now but next time your body will recognize it faster and your throat could swell up. every time you eat nuts it could be a little worse than the last time!

Talk to your doctor about celiac disease, since that seems to be what you have. If the doctor doesn't want to listen, get a new doctor.
Good luck!
