You should definitely get some quotes before you go pick up your bike. I am not sure what bike you are getting or how old you are, but some bikes will take a big chunk out of your wallet to insure (like $2,000 or more per year).
Dealerships will require you to show proof of insurance if you are going to finance the bike. If you are going to buy it with cash, then they don't care. If you wreck it or get pulled over, it is your responsibility.
Depending on the state, you usually have 30 days to insure the vehicle (or bike)after you purchase it. However, if you wreck it or cause damage to someone else and you dont have insurance during those 30 days, you are screwed and they can sue you.
I would get some quotes to set up a policy, and while you are at the dealership (or as soon as you get home) activate the policy that is right for you.

Since motorcycles are smaller in size and weight, you won't do as much damage with it as if you were driving a car and got in the accident. Therefore insurance is not required for motorcycles but check with your state to be sure. If you were to get a full coverage for your bike, that's were you would need to pull some cash out. Because you can get easily killed riding a bike the insurance company will make sure that you pay them enough for your funeral.

Have you insurance before you ride your new toy! Some states will take it away right after asking you for proof of insurance and you can't provide it. Motorcycle insurance is cheap, unless it's a c---rocket. If it's a street bike, and you have a clean driving record it won't be high at all. Does your state require you to be motorcycle endorsed? If they do, you are going to have to do that before getting your insurance for the bike. You don't have to get the insurance, but that's the wisest thing to do! As soon as you plan on driving it. You have to produce financial responsibility or insurance. I would have it in force when you are picking it up and have the title changed, therefore, you would have complete care, custody and control of your motorcycle. Enjoy your new bike...

You can ride it home but it means impounding and a lot of expense if you get stopped and don't have insurance.
