Ideally, they should have been force-fed foie gras for at least two years before reaching the table.
If you encounter anything that takes a dress size less than 18, send it politely back to the kitchen - the chances are that her owner skimped on proper feeding, and she will end up falling into your 'some don't' category.
'Bone appetit', as my first cousin used to say. (He claimed to be an Alaskan Mamalute, even though he'd been neither to Alaska nor Mamalutia. What a poseur.)
