EASY SWEET POTATO PIE
1 1/2 c. sweet potatoes (cooked & mashed)
2/3 c. packed dark brown sugar
1/4 tsp. ground allspice
2 eggs beaten
1 tbsp. lemon juice
1 c. milk
1 unbaked pie shell
Pecan halves for decoration on top only (optional)
Mix all ingredients. Spread into pie shell. Bake in 450 degree oven for 15 minutes. Reduce heat to 325 degrees and bake for 30 minutes more. Decorate top with pecans if so desired.

1 9-inch unbaked pie shell
1 large sweet potato, boiled
6 tablespoons butter
3 eggs
3/4 cup sugar
1/2 cup milk
1/2 teaspoon cinnamon
1 teaspoon vanilla
Instructions:
1. Preheat oven to 400F.
2. Peel boiled sweet potato and place in large mixing bowl. Mash with butter.
3. Add eggs, sugar, milk, cinnamon and vanilla and mix well.
4 Turn out into pie shell and bake for 15 minutes. Lower temp. to 325F and bake another 30 min.

For a 9 inch pie
1-3/4 cups strained mashed cooked sweet potatoes
1 tsp. salt
1-1/2 cup milk
3 eggs
1 cup sugar
1 tsp.cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1 tbsp. melted butter
Heat oven to 425*. Beat all ingredients together with rotary beater. Pour into pastry lined pie pan. Bake 45 to 55 min. or until a silver knife inserted 1 inch from side of filling comes out clean. The center may still look soft but will set later. Serve slightly warm or cold.

Use mashed cooked sweet potatoes in the same amount as the canned pumpkin in a pumpkin pie recipe and you will have a good sweet potato pie.

4 ounces butter,softened,2cups cooked and mashed sweet potatoe,2 cupsgranulted suger,1 small can plus 2 tablespoons of evaporated milk,1 teaspoons vinilla,3eggs beaten,1 1/2 teaspoonscinnamon,2 prepared pie shells unbake.
preparation
mix butter,potatoes,sugar,the evaporated milk until well blendedadd vanilla,eggs,cinnamon,mix well pour into the prepared pie shell bake in 350 oven for 1 hour until it sets it makes 2 pies
