It is rude to mention specific gifts - whether you do or do not want them - on an invitation to a party. You're inviting the person to the event because you want them there, NOT for a gift, though people usually bring gifts. My point is that you do not want them to feel obligated to bring a gift, as simple as that.
You should use word of mouth to get this around. Furthermore, people usually get gift receipts for purchases they make. If the mother receives diapers other than her chosen organic type, she should use the gift receipt to return the diapers without saying anything to the gifter. If she does not have a gift receipt, she can donate them - someone will need them, that's for sure. It would also be improper to ask for a gift receipt for something like that, as it would not be returned for size/color, etc., and this would make the gifter feel bad because then she'd have to explain, "well, I'm using organic". Most people don't think of that unless they know you well. She may be able to return and get a store credit without a receipt.

I would just say the Mom is using Organic diapers ONLY, and then maybe give the name of the place to buy them.

Is the mom-to-be registered anywhere? Maybe if she only registers organic diapers, people will get the idea. Or maybe you can personally call each guest just to mention it to them. Better you do that than someone waste their money buying the wrong diapers.

What are organic diapers? If they can be purchased, it is perfectly okay to mention what and where it can be purchased. If not, then just simply add at the bottom of the invitation, near the RSVP - "no disposable diapers, please - this family is going organic!"

Not-so-Subtle word of mouth.
Even a shower invite should not mention gifts.
So even if one or two people miss (ignore) the word, at least you cut back on diaper gifts significantly.

make an ink stamp with a pic of a diaper thru the no circle. Mention that organic diaper cleaning supplies would be more than welcome.
