There is a passage in the gospel when Jesus casts all these demons out of this person and sends the demons into a herd of swine. My question is this: what are swine (pigs) doing in a Jewish dominated area?

Interesting question, and I hope you get a knowledgable answer. I suspect it has to do with where Jesus was at the time - what kind of people he was with.

Perhaps the owner of the pigs wasn't jewish, or maybe that is why Christ cast the demons into the herd of swine

What do you mean Jewish dominated area? By Jesus' time the area that Jesus was controlled by Romans. The areas you are referring to were along trade routes and had diverse populations. FYI the area was dominated by Semetic peoples a larger group that Hebrews happened to be a member of...along with Arabs, Persians, and other groups...All Semetic peoples. So to say Jews dominated the area is NOT CORRECT. PEACE!

The whole of Judea was occupied by Romans and their Allies, I am sure there was a thriving market for Ham and pork products.
In fact the Jewish community was not the largest population in the region.

Although the population was largely Jewish, the richer ruling class was mostly composed of Greeks and Romans, who ate all kinds of crazy stuff, including pork. My guess is that they were being raised for this upper-class, although it is only a guess. Good question!

didn't Jesus and crew went across the lake Galilee to a cemetery i think that was mostly gentile area but a Israeli could raise any thing the wanted they couldn't eat but trade with gentiles

Pigs are known to be the garbage disposals of the animal world. They will eat anything and every thing you feed them.

They were in the region of Gadarenes which wasnt a "Jewish" area

There were others living in that area as well. Samaritans and other gentiles.
