It looks like a mermaid and want to know why they chose that mark for their company.

The company was in part named after Starbuck, a character in Moby-Dick, and its insignia is a stylized cartoon siren

The company logo is a siren (sometimes called a mermaid, but more properly known as a melusine since she has two tails). The logo has been streamlined over the years. In the first version, the Starbucks siren had bare breasts and a fully-visible double fish tail. In the second version, her breasts were covered by hair, but her navel was still visible, and the fish tail was cropped slightly. In the current version, her navel and breasts are not visible at all, and only vestiges remain of the fish tails. The original logo can still be seen on the Starbucks store in Seattle's Pike Place Market.

I was once in a Starbuck and was going to take a picture of the group I was with in front of the logo on the wall. We were asked not to take the picture by the employee. We said, that was ridiculous and he threw us out and said it was their company policy. So...it must be something secret.

She is a representation of a mermaid, in particular, a siren. From "The Odyessy", sirens are mythical half-woman/half-fish creatures whose alluring songs entice men (sailors) to their death.
My guess is that Starbucks coffee is so alluring that you can't help but go in and buy a cup of coffee, therein the siren logo.
