vidalia. It is a large sweet onion. Use an apple corer to core out the center, this slices the onion. don't go all the way through, so that is stay in tack. coat it in your breading mix, and fry in hot, hot oil for 5 - 7 min, until lightly brown. Don't undercook it as it will be raw, and don't over cook it as it will be burnt tasting. If your fryer doesn't have a basket, make sure that you have a large slotted spoon to scoop it out of the oil. place on a paper plate with a paper towel and tada, enjoy....dip in ranch, or ranch with a little horshradish added, lots of great dipping items are available.

That depends on your taste buds, if you want it to be a little hot use a whit onion, if you want it to be a little sweet use a walla walla onion or a vidalia onion. I believe most restraunts use either a yellow or a white onion. Hope this helps.
