My neighbor's mother owns a farm and he brought me approx 2 lbs of fresh green beans along with smoked ham hock. I snapped off the ends of the beans and put it all in my crock pot with onions and seasoned it with pepper and crazy salt. Did I do this correctly? Any suggestions?

Sounds good as long as you kept your eyes on them to make sure they didn't get too soggy and wilted/brown.

I personally love Giada De Laurentiis (Everyday Italian on Food Network)'s recipe. Very easy and fast to make and it's delicious! Grow your own basil during the spring/summer and you'll have it on hand whenever you need it. A definate favorite:

Sauteed Green Beans with Tomatoes and Basil

1 1/2 pounds fresh green beans, trimmed
2 tablespoons unsalted butter
1 tablespoon olive oil
3 large shallots, thinly sliced
2 garlic cloves, minced
1 (14 1/2-ounce) can diced tomatoes
1/4 cup dry white wine
2 tablespoons thinly sliced fresh basil
Salt and freshly ground black pepper

Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.

I clip the ends off of the green beans before cooking them and I put them in a pot with a little water on about medium heat for about 10 or 15 minutes if they start to become a little limp remove them from heat. Drain the water off and add butter.

Sounds good to me - that's how my mom always does it (although she just simmers them in a covered pan with water on the stove for hours, until the beans are tender) and she throws in some new potatoes with the beans, as well. Very delicious!

The only thing I would worry about with the crock pot is overcooking them. I like them crisp tender, and you can do this by just steaming them or boiling them in a pot, or better yet, stir frying them with a little olive oil, adding a tablespoon of water as you cook them, so they don't burn. Just test them with a fork and they're ready when the fork pierces them easily.

I don't think they will be too good in a crock pot stove top would be better put them in cold water and bring to boil for 10 minutes

MMMM!! You did well if it tasted good. Did it? I like to snap off the ends (don't know why, the little tip is good) cut them to bite sized and microwave for a bit. Salt, pepper and butter works.

I don't know..I think you're sposed to cook them in the oven. I love them tho...bring me some when they're done.
