Parmesan cheese, salt and peper.
Fun question!
I did not know that so many people doctored their mac & cheese!

Sometimes I'll cut up ham and throw it in my mac n' cheese.
I also like to put bacon bits (real, not artificial) in it.

Hmmm....Good one. It depends on how I am feeling that day. Some days, we put hamburger in it with some salt and pepper. Some times, I like hot dogs in it. But I am like you...I love some hot sauce on it. There is something about that taste that I can't get enough of. I have had it with tuna and peas in it...um not good. At least not the stuff I had...ick!!

Depends on how fancy I am getting, and what brand.... If it's the stuff you have to mix with butter and milk, then it's salt and pepper.... or if I am feeling particularly gourmet, I like diced cooked chicken, and Rotel brand diced tomatoes with green chiles. Mmmm....

Truffles :) Black or white, I don't care. Just as long as they're there.
Just to clarify, I'm talking about the fungus, not the chocolate kind of truffle!

Definitely ketchup. I also like to mix it with ground beef (cooked, of course!). Mmmmmm!

None of what you have listed, but I do like to add cut up hot dogs or a can of tuna to spice it up.
