Try cutting up zucchini and yellow squash into bites size pieces. Cut up a tomato and an onion into same sizes. Sprinkle liberally with Parmesan cheese, seasoning with dried basil, onion and garlic powder. Put in microwavable covered container and cook on high until tender. Wonderful side dish hot or cold.

My husband will only eat lima beans if I cook them. I bring frozen beans to a boil in water to cover, then add salt, generous butter, and a few shakes of Tabasco sauce. Simmer for 12-15 minutes until almost soft (not mushy). If you like, this can be turned into succotash by blending limas and white petite corn in a 2:1 ratio. Add a coarsely chopped plum tomato (seeds removed) and cook as above. Remove the tomato skins as they fall off. Yum!

Southern Vegetable Gumbo

3 onions sliced
3 tablespoon margarine
2 green peppers, chopped
18 small okra pods
5 large tomatoes
1 cup sweet corn


saute sliced onions in margarine for 2 minutes.
add chopped peppers and continue cooking for 3 minutes longer.
wash and remove stems off okra.
add okra and peeled chopped tomatoes.
cover and cook about 10 minutes. stir frequenly
add corn and cook 10 minutes longer.
add salt and pepper


30 minutes total cooking time.

Fried cabbage is pretty good, Just slice it fairly thin and cook it on med-high heat in butter. Sprinkle it with lots of pepper. It's done when it gets a little brown and tender.

asparagus - sauteed in butter with a fish dish is awesome

carrots - cut and boiled with
brocolli - cut the heads and boiled (add butter for sweet taste)
with a beef dish

onions, red peppers and green peppers with chicken - cut and sauted with no butter

Wasabi Mashed Potato.

Just the same way you would make mashed potato. But also add in a dash of green wasabi paste. (Depends on how spicy you want it to be.)

fried or mashed potatoes. try carrots, baked beans with onions, beans with molasses or bacon, french fries, tater tots, onion rings, peas, fresh tomatoes and cucumbers..yum, or fried squash. Broccoli , peaches or cabbage is good too. salad is good too with all of your favorite fruits or vegetables. good luck.

different ways to cook carrots

To steam them,
boil water and have something that holds the carrots above the water so that the steam cooks the carrots. Cover the pot.

hint poke small holes in carrots so they bake faster

also another way is to fry in oil for 10 minutes
