If I let it happen too soon, he'll think I always have sex quickly- but I'm REALLY attracted to him & that's why I wanna do it. Also, if I initiate it, that could either turn him on or he'll think I'm easy. Should I just wait for him to get to it?

You should read his character. It's all individual. In my opinion, I wouldn't wait if I wanted to do it, but only if I see that he will be OK with it too and that he wouldn't misunderstand me. I had sex with my current boyfriend the first night, and now we're together for more than a year. All in all, it all depends on his personality, and you, as his girlfriend, should be able to feel what is right.

There is no good answer. When to have sex depends upon the place, the person, if a condom is around.
Never have sex when it would make you look bad or slutty. Never do it in a car for the first time. etc
