No you don't need breading. Just cut the potatoes to desired size and put the potatoes in a towel and make sure they are dried as thoroughly as you can. If they have too much moisture on them when you put them in the oil they will not crisp up well.
Also, for even crispier potatoes. Fry only until they are a very light brown. Take them out of oil and drain the oil off of them. Leave the potatoes until they are cool, then put them in the oil again until they are golden brown.

No, you do not need any breading..Just cut your potatoes into thin strips and use any seasoning you like 9ex:salt,pepper,seasoning salt). Drop into hot grease and fry..

you can put a breading on for a different kind of taste with some seasonings but the best way is cut them up stick them in the oil

No! Just fry in oil about 350-375ºF. Don't crowd them in the oi; do in batches. And slice thinly so they won't get too dark while waiting on the inside to cok.

Just fry them in 450 degree oil. or lightly bread them in seasoned flour dipping them in water first.
