I have a reciepe that calls for 1 cup of vegetable oil... I would like to use butter instead. Is it an even exchange? 1 cup oil = 1 cup butter? Help!

Butter does contain some non-fat solids and liquids so technically your are making it a little lower in fat! If you are baking it is a wonderful and delicious substitute. Obviously it won't work as a substitute in a salad dressing! You will probably want to melt the butter when using it so that the recipe mixes up in the same manner. That way you won't have as many issues with mixing times and textures.

yes If you melt the butter down it will be the same amount as the oil

butter will give it a different taste. most recipes you can skip it and it wouldnt matter

it may change the recipe and make it heavier--butter doesn't always substitute well
