Title: Steamed Fish With Tart Thai Sauce
Yield: 4 Servings

Ingredients

1/2 sm carrot -- peeled and grated
2 tb lime juice
1 tb rice vinegar
2 ts low sodium soy sauce
3 tb water
1 1/4 ts sugar
1/4 ts chili oil
2 ts fresh cilantro -- minced
1/4 c fresh cilantro sprigs --
1 divided
1 1/3 lb rockfish fillets

Instructions

Combine the carrot, lime juice, rice vinegar, soy sauce, water, sugar,
chili oil and minced cilantro. Set aside. Place the fish on a rack or
in a bamboo steamer; lay the cilantro sprigs on top of the fish. Put
over boiling water, cover and steam 12 minutes per inch thickness.
Spoon the sauce over the fish and serve, with rice.

take some Cod fillets, and pour half orange juice and half lemon juice on them, sprinkle a little red pepper for taste, and sprinkle a little parsley on top to make it pretty, marinate for an hour and bake until done. The oj and lemon juice with start to cook your fish while it's marinating in the fridge so you the cooking time will be cut in half. Yummy. We had this the other night.

GRILLED FISH

2 to 4 filets of orange roughy or red snapper
1/2 stick butter
2 tsp. salt
2 tsp. pepper
2 tsp. garlic
2 tsp. cayenne pepper
2 tsp. paprika

Use fish rack or old cake cooling rack on grill, spray with Pam. Have grill warmed up at low setting.

Melt butter and mix all ingredients, but fish. Put fish on grill and baste, cook 5 minutes, turn fish over and baste again. Keep doing until edges are crisp and all butter is gone. Serve with salad.

INGREDIENTS:
1/4 cup olive oil
1 tablespoon dried parsley
2 tablespoons dried thyme
1 tablespoon dried rosemary
1 clove garlic, minced
4 (6 ounce) fillets salmon
1 lemon, juiced

DIRECTIONS:
Preheat grill for medium heat.
In a shallow glass dish, mix the olive oil, parsley, thyme, rosemary, and garlic. Place the salmon in the dish, turning coat. Squeeze lemon juice over each fillet. Cover, and marinate in the refrigerator for 30 minutes.
Lightly oil grill grate. Transfer salmon to the grill, and discard any remaining marinade. Cook salmon on preheated grill over medium heat for 8 to 10 minutes, turning once. Fish is done when it flakes easily with a fork.

Any fish of your choice, add salt, pepper, squeeze of lemon, small knob of butter, place all of the above in kitchen foil & wrap in parcel, place in pre-heated oven for 15 - 20 mins, serve with stemed veg.

Delicious and light.

Mahi Mahi grilled or broiled with lemon pepper seasoning. Serve with wild rice and steamed veggies.
