Here's a good one. I like it because it doesn't take anything I usually don't already have on hand. And, it's quite tasty.
Chicken Scampi
1/2 cup butter
4 T. olive oil
1 tsp. dried parsley
1 tsp. dried basil
1/4 tsp. dried oregano
2 to 3 cloves garlic, minced
1/2 tsp. salt
3 T. lemon juice
4 chicken breast halves, sliced lenghtwise into thirds
In a skillet, heat the butter and oil over medium high heat until butter melts. Add the parsley, oregano, basil and garlic and mix together in the skillet. Stir in lemon juice. Add chicken and saute for about 5 minutes or until white. Lower heat and cook for about 10 to 15 minutes or until chicken is cooked through. Add more butter if needed.
This is good just like this, but if you want (or have the ingredients) you can add a little white cooking wine to the butter sauce, along with some diced red peppers, onion, and mushrooms, and serve it over angel hair pasta. YUM.

Grilled pork chops or chicken breasts with any of the following: foil pack potatos or zucchini, fresh veggie kebabs, side salad and some ice cream.
IF you have tequila around the house, it is an excellent marinade for chicken, so is whisky or bourbon. The alcohol burns off to make it kid friendly. You can also use almost any fruit juice or salad dressing to marinade chicken.
Meatloaf with mashed potatos and green beans
Pancakes with fruit and bacon
Tacos, burritos, loaded nachos, or taco salad
Grilled cheese and tomato soup with fresh veggie tray
Baked spaghetti or ziti, kind of a mock lasagna, the recipe listed above sounds excellent
Hot dogs on the grill with mac and cheese and side salad
Shepherd's pie is hamburger, cream soup, frozen or canned mixed vegetables, mashed potatos, layer together in a casserole and top with mashed potatos and cheese.
Loaded baked potatos
Something I do a lot:
Boil a large pot of water.
Add your fav pasta, mine is fettucine.
About 5 minutes before the noodles are done, add frozen broccoli or california blend, or stir fry vegetables.
Add hillshire farms smoked sausage, cut in coins, or other precooked meat like ham chunks, that can hold in boiling water. OR precook chicken, a couple pork chops, or minute steak and hold until just before serving.
When all the pasta, meat, and veggies are heated through, drain it. Using the empty pot, melt butter, add milk and some coffee creamer, some parmesan cheese, and seasonings that you like and heat gently through. Add the drained stuff back to warmed sauce and stir well, maybe a couple more minutes on low heat to get it piping hot.
Burgers with homemade fried potato slices. Thousand Island is an interesting topping for a burger, it is what McD uses for special sauce for Big Macs.
Omelets or eggs are another breakfast item that are good for dinner. Another recipe I can share.
Thaw some tator tots in the microwave until they start to fall apart, then scramble them in a skillet with butter, add your fav seasonings, onions, garlic, green peppers, etc. Add eggs and a blop of...softened cream cheese! Scramble it all up, it will be a really wet mixture, not entirely appetizing. Arrange flour tortillas and top them with cheese, then add eggs and fold or roll.
Mac and cheese out of the box, add canned chili and top each portion with a little shredded cheddar, or hamburger and choice of veg, or tuna and peas.
Chili is easy to make. Brown hamburger in a pot, drain, add canned tomato sauce, chili powder, onions, choice of beans, garlic, etc. Top with sour cream, shredded cheese, or serve with a baked potato or french fries.
In the summer time, esp with kids, sometimes I just arrange lunch meat and crackers with fresh fruit and veggies. Serve with napkins and toothpicks. Perfect by the pool.

2 cups of water
3 tablespoon butter
place chops in large baking pan arrange all other ingredients around and add water
cover with foil and bake at 350 for about 45 minutes or until done
This is very good my family loves it.

Some round steak marinated in chimichuri sauce. You can find a packet in the spice isle at the grocery store. YOu just mix it with salad oil and vinager adn marinated for an hour and grill it. I made this last night for the first time and it was a winner with my family

Spaetzle
INGREDIENTS:
4 cups all-purpose flour
5 eggs
1 teaspoon salt
3/4 cup water
--------------------------------------------------------------------------------
DIRECTIONS:
In large bowl, combine flour, eggs and salt. Add water a little at a time to form a soft dough.
Boil 2 quarts of water in a large pot. Squeeze dough out into the water using noodle or fruit press or by pressing through a colander with large holes. When noodles float to the top of the water, they are done (3 to 4 minutes). Serve as a side or main dish.

1 bottle beer
cook on high in crockpot 1 hour reduce to low for 6 hours. Buy french rolls. slice thin. Aujus is awesome.
