Crispy Fried Okra
NGREDIENTS:
* 1 pound fresh okra
* 2 eggs, beaten
* 4 to 6 dashes hot pepper sauce
* 1 cup cornmeal
* 1/2 teaspoon salt
* 1/2 teaspoon ground cayenne pepper
* oil for deep frying
PREPARATION:
Wash okra and drain well; cut off ends and discard. Cut okra crosswise into 1/2-inch slices. In a bowl, combine beaten eggs and hot sauce; add okra and stir to coat all pieces well. In a shallow dish, combine cornmeal, salt and cayenne.Dip okra pieces into cornmeal mixture to coat well. Heat oil in the deep fryer to 375°. Fry okra in batches until browned, about 4 to 6 minutes for each batch. Drain on paper towels and serve immediately.
Serves 4.

Hey I don't know what you mean about "picky", but here is one good recipe for okra.
I pound of orka
1/2 pound of tomatoes
1 large onions
salt pepper
accent
1/4 teaspoon of sugar
1/2 cup 0f corn
slice orka , tomatoes, and onions, add corn, salt, and pepper to taste. you may add other spices if you wish. Place is a skillet with a small amount of cooking oil, cook until done.

Heat the oil and butter in a large skillet until the butter is melted. Add the onion and bell pepper; toss to coat evenly. Stir in the okra and cook over medium heat until the onion is translucent.
Add the tomatoes, wine, lemon juice, parsley, salt, and pepper.
Simmer, stirring occasionally, until the tomatoes soften. Add the shrimp and continue cooking for 3 to 4 minutes, or until the shrimp turns pink and opaque.
Serve with hot cooked rice.
Serves 4.

I use okra in seafood gumbo...but before you add it to the gumbo you have to fry it off to get the slime off. Another good recipe is okra and tomatoes..same thing there, fry it off first. Some folks like steamed okra (the small ones), on their salads.
