It's taking a really tiny portion of the peel or skin of the orange. They make a tool called a zester that scrapes the peel off. Your receipe will be fine without it...it just adds a bit more orange flavor. You have to be careful. If you try to use maybe a regular shredder, the pieces will be too large and may add some bitterness. A zester tool make it really fine - kinda like sawdust. -

It's grated orange peel. Your choices are to either grate an orange peel for the recipee or there is a powder you can buy in the ingredients aisle of the grocery store that you can use as a substitute if you'd rather not use an orange for just part of its peel.

orange zest is the outer skin on an orange...literally the orange part of the orange. you can just use a tool called a zester to get it off, or cut it off with a knife. be careful not to go too deep into the skin. the white part of the orange below the skin, the pith, is very bitter and you dont want to use that

the zest is not the rind, that's why it is called the zest. It is the very outer orange-colored skin. The rind, white-colored inner layer, is very bitter. To get the zest, either use a zester (a tool at any kitchen section) or a very sharp small knife that can cut just the very outer layer away.
