I would go with Creole Flounder
here's the recipe
2 lbs flounder fillets
1 1/2 cups diced tomatoes
1/2 cup diced green peppers
1/3 cup lemon juice
1 tablespoon vegetable oil
2 teaspoons salt
2 teaspoons onion powder
1 teaspoon basil
1/4 teaspoon black pepper
4 drops hot pepper sauce
Heat oven to 450 degrees F.
Place fish in a greased 13" X 9" baking dish.
Mix remaining ingredients and spread over fish.
Bake 6-10 minutes or until fish flakes easily with a fork.

The World's Easiest Roast Chicken:
Stuff a whole chicken with 4 peeled cloves of garlic, a quarter of a lemon and a few sprigs of fresh rosemary. Sit the chicken upside-down on a kilo of salt (I kid you not) that has been poured onto a baking tray. Bake the chicken at 190 centrigrade/gas mark 5 for about 90 minutes.
You will never cook chicken a different way again; crispy skin, tender meat - delicious.

Don't follow with another fish dish it will be toooooo much try something with pork as that is a good follow up to any fish dish...say pork fillet sliced then put under grill and served on a bed of nutmeg mash with lots of fresh veg and a white wine sauce...gorgeous. What time by the way ?

Largely depends on the sauce you are using for the mussels...I love moules marinara followed by thai salmon fish cakes with a sweet chilli dip. If you don't want two seafood courses, how about good quality steak and fresh sesonal veg. Simple and delicious with very little messing around....

Crabcakes, or linguine and clam sacue. It is light and goes really well with the mussles. Buy a loaf od crunachy bread too.
