This is a casserole he would love, I haven't meet anyone who hasn't begged me for the recipe.
Tear the turkey into pieces and cover a 13x9 in. dish. Pour cream of mushroom over it and then add about 4 cups of shredded cheddar on top of that. Cover w/ Italian seasoned bread crumbs and bake @ 350 for 30 min.
If he doesn't like that then tell him tough and that he can think of an idea for dinner.

Turkey Pot Luck Casserole
* 4 ounces medium noodles
* 1 package (10 ounces) frozen broccoli spears
* 2 tablespoons butter
* 2 tablespoons flour
* 1 teaspoon salt
* 1/4 teaspoon prepared mustard
* 1/4 teaspoon black pepper
* 2 cups milk
* 1 cup grated mild Cheddar cheese
* 2 cups cooked diced turkey
* 1/3 cup slivered toasted almonds*
Preheat oven to 350°. Cook noodles following package directions; drain. Cook broccoli just until tender. In a saucepan over low heat, melt butter; blend in flour, salt, prepared mustard, and pepper. Stir until smooth and bubbly. Gradually add milk, stirring until thickened; remove from heat and stir in cheese until melted. Dice broccoli stalks; leave flowerets intact. In an 8-inch square baking dish, arrange noodles, broccoli stems, and turkey; pour cheese sauce over all. Arrange the flowerets over the top, pressing down a bit. Sprinkle with almonds. Bake for about 15 minutes, or until hot and bubbly.
Turkey casserole serves 4.
*To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.

It's not exactly gourmet and it's really easy, but you could make turkey wraps. Just wrap the turkey with some lettuce, tomato, and anything else that you would like, inside of a tortilla. They might even be better for lunch. Good luck!

Turkey curry! It's delicious and you can't tell the difference from chicken. Or how about a nice tossed turkey salad. Or any recipe that uses chicken... pasta with a yummy sauce. Turkey is a great cheap alternative to chicken.

4) Turkey Alfredo, boil some spagheti and mix a jar of alfredo in with the turkey

one of my favorite things to eat I found watching friends and it was a turkey sandwich !!!! You take 3 slices of bread on one put turkey salt and pepper slather the next piece of bread with mayo(hellmans) put that mayo side on the turkey on the other side of that slice of bread put turkey salt and pepper on that last slice of bread put good slather of gravy left over from the turkey !!! this is a great sandwich that I recommend you try cause you'll love it!!!

Just sub your turkey for chicken in this dish!
P.F. CHANG'S Soothing Chicken Lettuce Wraps
(recipe for ONE below, multiply as needed)
8 dried shiitake mushrooms
1 tsp cornstarch
2 tsp dry sherry
2 tsp water
salt and pepper to taste
1½ pounds boneless, skinless chicken
5 Tbsp oil
1 Tbsp. fresh minced ginger
2 cloves garlic, minced
2 green onions, minced
2 small dried chilies, (optional)
1 (8 oz) can bamboo shoots, minced
1 (8 oz) can water chestnuts, minced
1 pkg cellophane Chinese rice noodles, prepared according to package
Cooking Sauce
1 tbsp hoisin sauce
1 tbsp soy sauce
1 tbsp dry sherry
2 tbsp oyster sauce
2 tbsp water
1 tsp. sesame oil
1 tsp. sugar
2 tsp. cornstarch
Bibb or other soft leaf lettuce
Cover mushrooms with boiling water, let stand 30 minutes then drain. Cut off and discard woody stems. Minces mushrooms. Set aside.
Mix all ingredients for cooking sauce in bowl, and set aside.
In medium bowl, combine cornstarch, sherry water, soy sauce, salt, pepper, and chicken. Stir to coat chicken thoroughly. Stir in 1 tsp. oil and let sit 15 minutes to marinate.
Heat wok or large skillet over medium high heat. Add 3 TBSP oil, then add chicken and stir fry for about 3-4 minutes. Set aside.
Add 2 TBSP oil to pan. Add ginger, garlic, chiles (if desired), and onion; stir fry about a minute or so.
Add mushrooms, bamboo shoots and water chestnuts; stir fry an additional 2 min.
Return chicken to pan. Add mixed cooking sauce to pan. Cook until thickened and hot. Break cooked cellophane noodles into small pieces, and cover bottom of serving dish with them. Then pour chicken mixture on top of noodles. Spoon into lettuce leaf and roll.
