Fajitas. Cook your chicken strips in a pan on the stove with some onions and peppers if you have them. Eat them with tortillas and salsa. Quick, tasty, healthy.

I would save teh uncooked chicken strips for another day then, or cook them on the stove top, in the oven, in the microwave. Poultry is about the only meat that I will not eat even slightly uncooked!

i dont have a grill outside either, so when i have chicken like these i:
1. put flour on it and deep fry it which is really good, but high in fat

or

2. I line a glass bowl (oven safe) in aluminum foil and place the strips in the bowl. then i flavor it with either bbq sauce poured on top, or any seasoning that you like. seal the chicken up in the tin foil and cook until the chicken is done. usuaaly 350 degrees for 30 - 45 minutes for me usually works but depends on the thickness of the chicken!

Tonight I am cooking my chicken in the oven with bbq sauce! it is very good and better for you than fried foods!

Parmesan Chicken

6 bnls, sknls Chicken Breast
1 cup A/P flour
1 tsp. kosher salt
½ tsp. freshly ground black pepper
2 extra-large eggs
1 ¼ cups seasoned dry bread crumbs
½ cup freshly grated Parmesan cheese, plus extra for serving
Unsalted butter
Good olive oil

Cut chicken breasts into 1” strips, pat dry w/ paper towels.

On one dinner plate, combine flour, salt, and pepper. On a second plate, beat the egg w/ 1 Tbsp. of water. On a third plate combine the bread crumbs and parmesan cheese. Cot the chicken on both sides w/ the flour, then dip into the egg, then into the bread crumbs, pressing lightly.

Heat 1 Tbsp of butter and 1 Tbsp. of oil in a large sauté pan on medium-low. Cook chicken in batches on both sides until cooked through. Chicken is done when meat is opaque and juices run clear. Add more butter and oil to cook remaining batches as needed. Sprinkle more parmesan cheese on top of cooked chicken to serve.

use the stove then and have some pasta with chicken. Or have a chicken caesar salad. or bread them and have chicken strips.

Dip them in egg wash and bread crumbs and fry them in oil, CHICKEN FINGERS. Dip[ them in a mix of half mustard and half honey HONEY MUSTARD

INGREDIENTS:
2/3 cup plain non-fat yogurt
2 tablespoons low-fat mayonnaise
2 ounces crumbled blue cheese
3 tablespoons finely chopped green onions
1/4 teaspoon ground black pepper
1 teaspoon vegetable oil
1/2 pound skinless, boneless chicken breast halves - cut into strips
1/4 teaspoon salt
2 teaspoons butter
1 tablespoon hot pepper sauce

DIRECTIONS:
To Make Dip: In a small bowl, whisk together the yogurt, mayonnaise and bleu cheese. Stir in green onion and pepper; cover and refrigerate.
To Make Strips: Heat oil in a large skillet. Season chicken with salt and sautee over medium high heat, stirring frequently, until lightly browned and cooked through, about 7 to 10 minutes. Remove skillet from heat. Add butter and hot pepper sauce to skillet and swirl until the butter melts and the sauce coats the chicken.
Serve hot chicken with refrigerated dip mix.




Sesame Chicken Strips with Sweet Sauce

"Chicken strips dipped in a mayonnaise/mustard mixture, then a sesame seed/cracker crumb mixture and baked. Served with a honey mayonnaise dipping sauce. These chicken strips are very tasty, especially when dipped in the sweet sauce. These go over well at summer get-togethers and make great finger foods."

INGREDIENTS:
1 cup mayonnaise
2 teaspoons dried minced onion
2 teaspoons dry mustard
1 cup crushed buttery round cracker crumbs
1/2 cup sesame seeds
2 pounds skinless, boneless chicken breast halves
SAUCE:
1 cup mayonnaise
2 tablespoons honey

DIRECTIONS:
Preheat oven to 425 degrees F (220 degrees C).
In a shallow plate or bowl combine 1 cup mayonnaise, onion and mustard. Mix together and set aside. In a separate shallow plate or bowl combine the cracker crumbs and sesame seeds. Cut chicken lengthwise into 1/4 inch strips.
Dip chicken strips in mayonnaise mixture, then in sesame mixture to coat. Place coated strips in a single layer on a lightly greased cookie sheet.
Bake in preheated oven for 15 to 18 minutes, or until juices run clear. Mix 1 cup mayonnaise and honey together in a small bowl and serve with chicken strips.

1/2 cup dried bread crumbs
1/2 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 egg, beaten
5 skinless, boneless chicken breasts

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl mix together the bread crumbs, Italian seasoning and Parmesan cheese. Dip chicken breasts in egg, then in bread crumb mixture to coat. Place coated chicken in a 9x13 inch baking dish.
Bake in the preheated oven for 30 to 35 minutes or until juices run clear, turning over chicken 5 minutes before removing from oven.
