I've tried frying it in oil and baking it, and it always falls apart, what am I doing wrong I just want it to be presentable.

Baked Flounder
an easy and delicious way to prepare flounder.
3 lbs flounder fillets
salt and pepper
1-2 tablespoon lemon juice
1 teaspoon dried tarragon
2 cups low-fat sour cream
1 tablespoon minced chives
1 tablespoon minced parsley
6 servings

1. Preheat oven to 350 degrees F.
2. Spray a large baking pan with cooking spray.
3. Rub the fillets on both sides with lemon juice, then salt and pepper them to taste.
4. Place the fillets in the baking disk and sprinkle evenly with tarragon.
5. Cover evenly with sour cream.
6. Bake for about 15 minutes until fish is done but not over cooked.
7. Sprinkle with chives and parsley

You are moving it around too much and probably cooking it too long.

Is it fresh? If so, keep the skin and scaleson one side, and broil or grill on the pit. Then eat the meat off hte skin/scales. This is called cooking it "on the half shell" and is a very nice, neat way to prepare any fish.

If you broil it, you dont' need to flip it. Season both sides, lay on a pan, and broil or bake. Just until the meat is flaky and no longer translucent, but opaque.

Stuff it and roll it, use a spatula that will fit under it and pick it up quickly, Even if you fry it use something of full size to lift it upand dont over cook it.

dip in flour and steam it depending on the size between 3-8 minutes on high

nothing. when fish like flounder is done properly, it WILL flake apart.
get bigger spatulas.
