Creamiest Chocolate Mousse

It's so creamy (o.k. probably extremely fattening but holiday calories never count, do they?)I personally make the mousse without any alcohol added. Garnish with whipped cream and chocolate shavings for an extra special effect."

INGREDIENTS:
7 ounces bittersweet chocolate, chopped
7 egg yolks, beaten
2 tablespoons sugar
1 pinch salt
7 egg white
1 1/4 cups heavy cream
1 tablespoon kirschwasser (optional)

DIRECTIONS:
Place chocolate in a metal bowl over a pan of simmering water. Stir occasionally until mostly melted, then remove from heat, and stir until smooth. Set aside to cool slightly.
In a separate bowl, whip heavy cream to medium stiff peaks, but do not allow it to become grainy. Set aside.
In a separate bowl, whip egg whites with salt until soft peaks form. Sprinkle in the sugar, and continue whipping to medium stiff peaks. Fold in egg yolks and kirshwasser.
Fold in the melted chocolate until completely incorporated, then fold in whipped cream until evenly blended. Spoon into dessert cups, and chill until firm, about 1 hour.
Chocolate Mousse I

"Use a chocolate with a high cocoa content for best results. Feel free to use whisky, orange liqueur or anything you fancy, really, instead of the rum. This recipe can be made per person, using one ounce of chocolate and one egg for each. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. "

6 teaspoons rum

DIRECTIONS:
Melt the chocolate slowly, over, not in, simmering water. Remove from heat and beat egg yolks into chocolate with electric mixer. Beat in alcohol, if desired. In a separate bowl, beat egg whites to a stiff peak. Stir a large spoonful of egg whites into chocolate mixture to loosen. Then gently fold remaining egg whites into chocolate. Pour into serving glasses and chill in refrigerator until set, 4 to 5 hours. Will keep up to four days in refrigerator.

Chocolate Mousse II
INGREDIENTS:
1 cup semisweet chocolate chips
5 tablespoons boiling water
4 eggs, separated

DIRECTIONS:
Grind chocolate chips in a blender, using short pulses. Add boiling water and blend to melt the chocolate. Add egg yolks, one at a time, blending well after each.
In a medium bowl, beat egg whites with electric mixer until stiff peaks form. Fold egg whites into chocolate mixture gently. Pour the mousse into wine glasses or other serving glasses and chill in refrigerator until set.

Chocolate mousse ... will you invite us all over after you make it?
I get my Chocolate Mousse from Target, AncherFarms makes a great Mousse that's pre-made; I didn't' think it would be restaurant quality, but it is.

CHOCOLATE MOOSE
Ingredients

1 large package vannila pudding
1 large package chocolate pudding
10 graham crackers
1 container of whipped cream
Procedure
*************
Prepare puddings in one large bowl as dirrected on package. Set aside. In a large ziplock bag put grahm crackers. Crush with a rolling pin or your hands. Set aside. Add to your pudding: 1 small or large conatiner of whipped cream. Mix with blender (recomended) or 100 strokes with a wooden spoon. Chill. Serve in bowls with strawberrys on the side if desired. Enjoy!
