Smoked Boston Butt Roast

1 (5 lb) pork butt
2 tablespoons seasoning salt
4 tablespoons liquid smoke (I only used 2 T., one for each side)
1 medium onion, sliced
1 cup water
3 bay leaves
2 cups favorite barbecue sauce
House Seasoning use 4 T
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Preheat oven to 350.
Mix House Seasoning and store in airtight container.
Sprinkle one side of the roast with 2 T. of the House Seasoning, making sure to rub well.
Flip the roast over and rub the remaining 2 T. of House Seasoning.
Repeat the process with the seasoned salt and liquid smoke.
Place the roast in a large roasting pan.
Add the onion, water and bay leaves to roast.
Place in the oven and cook for 2 ½ to 3 hours or until thermometer reads 170 degrees.
Let meat cool and then slice.
Serve with favorite barbeque sauce.

For Boston Butt use only dry heat..in other words don't cover. I cut slits into the roast and insert garlic cloves...then I use McCormick's steak seasoning or Mrs. Dash. One version is to place the roast on a bed of thick sliced onions but I find this burns so I place mine on a rack in the roaster. Put the roast in fat side up first and bake at high temp (approx. 450-500 dg.) for about 15 minutes. Remove roast and flip over. Reduce heat to about 350. I believe the thermometer should be at 170 dg. at doneness..check for yourself though. ALways a winner at my house and the next day I pull the pork from the bone and put in crock pot with bbq sauce for sandwiches. Matter of fact, I just roasted one yesterday! Yummy

Crock pot. Throw in some onions, some carrots and cover the meat with beef broth. Put it on low for about eight hours.
Get you some biscuits and make a gravy out of the juices when it is done.
Now that's good eating.

smoking it on a grill with hickory chips on the fire to add the flavor to the meat

(make sure the fire is offset as not too cook the meat too quickly)
