if i were you, id go for it, there are tons of italians in search of teachers and i admit, there are a lot of them around, but that shouldnt stop you from going. i live here in florence and sadly not many italians speak well the language, its something needed for those in search of real good english teachers.
i have a friend of mine, italian that took some english courses and the teacher was this lady from new york, she was supposedly real real real good, the only thing was she charged 50 euros per hour per private lesson! a lot! but i guess she must be real real good, or else no one would pay that much for someone to teach that while there are thousands of other english teachers around.
if i were you, id go, check it out, follow your 8 week course and begin to put adds all around florence (thats how people do it) or do it through some school or progam that you can represent and see how it goes.

It should be an interesting experience, certainly worth trying. You will probably have to move to another city after you finish the course, as Florence is already full of mother tongue teachers, but you won't have many problems as mother tongue English teachers are very requested everywhere in Italy: working for a school is not very remunerative, but you can make good money with private lessons.
Pearl, just out of curiosity...how many foreign languages do YOU speak????

There is a company running courses in TEFL (teaching English as a foreign language) and when you have done it which can also be done on line or a weekend course they offer a placement service Poland is one place. Try TEFL.co.uk or a general search.
Ask your careers advice centre aswell.
