Banana Chocolate Chip Cookie Recipe
Ingredients
1 1/4 cup of all purpose flour
3/4 cup of semi-sweetened chocolate chips
1/3 cup of softened butter
1/4 tsp. of baking powder
1/2 tbs. of salt
1 mashed banana
1 tsp. of vanilla
1/4 cup of light brown sugar
1 egg
1- Preheat the oven to 350°F.
2. Greese the cookie sheets.
3. Add the egg and vanilla, beat together until a soften mixture.
4. Mix together the flour, salt, baking soda and set aside.
5. Cream together the butter and the brown sugar in a medium bowl. Incorporate the egg and banana. Stir a bit and also add the vanilla. Then add and mix well the remaining dry ingredients. Also incorporate the chocolate chips.
6. Make spoonsized dough balls and place them on the cookie sheets at least 2 inches appart.
7. Bake in the over for about 8 to10 minutes or until the cookies gets a nice goldened appearance.
8. Let cool on the cookie sheets for at least 5 minutes before removing and/or serving them.

2 large ripe bananas
2 teaspoons banana extract (available in health food stores) or vanilla extract
1 cup vegetable shortening, preferably Crisco, at room temperature
1/2 cup granulated sugar
1/2 cup firmly packed) light brown sugar
2 large eggs
1 cup semisweet chocolate chips
1 cup coarsely chopped walnuts
Instructions
Adjust an oven rack to the middle shelf and preheat the oven to 400 degrees F. Sift together the flour, baking powder, baking soda, and salt. Set aside. Mash the bananas with the banana extract, making about 1 cup. Set aside.
In the bowl of an electric mixer, beat the shortening and sugars at medium speed until light and fluffy, then blend in the mashed bananas. Add the eggs, one at a time, beating well after each addition. The mixture will look curdled. At low speed, blend in the flour mixture, stopping once or twice to scrape down the sides of the bowl with a rubber spatula. Fold in the chips and nuts.
Drop the dough by heaping teaspoonfuls 1-1/2 inches apart onto ungreased baking sheets. Bake until the cookies are golden brown, about 12 minutes, then remove to racks to cool. Store in a cookie jar for up to 1 week.
Yield: about 6 dozen cookies

DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. Sift the flour, baking powder, salt, and baking soda together, and set aside.
Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas. Add the flour mixture, and stir until just combined. Stir in the chocolate chips. Drop by spoonfuls onto prepared cookie sheets.
Bake in preheated oven for 12 to 15 minutes.
