I deboned the chicken and have about half of it left. I just don't feel like making sandwiches.

Enchiladas.

cooked chicken, cheese, olives, salsa. Wrap in flour tortillas, put in a casserole, top with cheese and enchilada sauce or more salsa, bake at 350 for 20 or 30 minutes

Stir fry is also good, any veggie, terriaky sauce, onions and garlic.

over rice.

Try this:

Golden Chicken Crackers.

Brown one onion, add boneless chicken shreds.
Pour 1 or 2 cans of cream of mushrom soup (depends on how much chicken is left). Add alittle extra salt and pepper to taste. Stir for a couple of minutes. ( you can add garden peas if you like)

warm oven grill - medium heat.

Pour the chicken ingredients into long rectangular casserole dish. Crush some Ritz crackers - enough to cover the chicken etc. Pour a little melted butter over the crackers.

Put in middle of oven and grill until crackers are a golden colour. Serve with creamed corned. This meal is a success all the time.

I've made dinner for 3 nights with one roasted chicken. We have the chicken as it is the first night, and the second night i chop it up for chicken quesadillas with spinach and cheese, and the third night i throw the rest of the chopped chicken in some whole wheat pasta with black olives, diced tomatoes and green onions with olive oil.

You could also make chicken salad (already mentioned), or use it as pizza toppings. If you want something prepackaged (ick) try the Chicken Helper and used the chicken diced up. Chicken casserole, chicken and rice, chicken pot pie, chicken and dumplings. I've also put it breakfast omelettes.

Leftover chicken is EASY to use the next day. Good luck.

Chicken salad is good. Mix the cut up chicken with some chopped celery, some mayo and a bit of Morton's Natures Seasoning.

Add cut up chicken to a green salad or pasta salad.

Chicken casserole is a favorite of mine. Partially cook some macaroni, cook it for about half the recommended time. Mix the macaroni with cut up chicken. Get a can of cream of mushroom soup and mix it with a half can of milk. Combine everything in a casserole dish and bake for about half an hour at 350 degrees. Some people like to put bread crumbs or fried onions on top before baking the casserole.

You can cut it up and put it in pasta with chopped fresh tomatoes, olives, and some olive oil.

You can also dress your pasta with a regular pesto or sun dried tomato pesto instead of fresh tomatoes and olives. Pesto is easy, put sun dried tomatoes, fresh parsley and basil and olive oil in a small food processor. Process it into a paste and put on the hot pasta and chicken. You can leave out the sun dried tomatoes and add pine nuts and parmesan instead if you want.

Make chicken salad, or, if you still have the bones, boil them to make a nice stock and make a lovely chicken noodle soup. here is what I do: boil the whole carcass with celery, onions, garlic cloves, and black peppercorns for about an hour. Remove peppercorns (and veggies if you like.) Refrigerate and skim off excess fat. Bring to boil, reduce temp. to simmer and add shredded chicken, sliced carrots, celery, crushed garlic, salt and pepper to taste. cook until veggies are soft. Add egg noodles and cook until done. Serve with crackers, croutons, or fresh bread.

Chop up on a salad, make chicken salad on crackers, cut it up into a pot of broccoli cheese soup (that's the best, add some potatoes too~talk about sprucing up a can of campbell's!) Make a pot of yellow rice and chop it up in there when it's just about done or just serve it together.

Try Chicken Tetrazzini! It's yummy and fast to make. The recipe calls for sherry but, when I make it I do not add the sherry.

chicken cassorole 1 10oz can of cream of chicken soup 1 10oz cream of celery soup 1 10oz of cream of mushroom soup 1 sm. pk.herb seasoning bread crumbs. mix together with leftover chicken pour over bread crumbs preheat oven to 350 bake for 20 min. try it you'll like it.

You can make chicken and gravy. and serve it with biscuits. that is always nice to have. or make a nice chicken salad with mayo and onion and anything else u would like to have in it
