fruit salad dessert

This is a wonderful tasting, easy salad. I forgot I needed to take a dish to a graduation party about 5 years ago, and was trying to figure out what I could do with the ingredients I had on hand. I found this recipe in quick cooking. Everyone raved and wanted the recipe, and I have been making it every since. This is easy to lighten calories by substituting FF SF pudding, light sour cream skim milk.
1 (11 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple chunks, drained
1 (16 ounce) can peach slices, drained
FRUIT SAUCE
1 (3 1/2 ounce) package instant vanilla pudding
1 cup cold milk
1/3 cup frozen orange juice concentrate, undiluted thawed
3/4 cup sour cream

enjoy

Here is one for free form peach tart: peel and slice about 5 fresh peaches add 1/4-1/2 cup sugar, a teaspoon of cinnamon, and a dash of salt. . Take a refrigerated pie crust, unroll, and place on cookie sheet. Place sliced peaches in crust, leaving about 2 inches for an edge. When crust is filled, sprinkle with whole thing with sugar and dot with real butter. Bake until brown, at about 350. Serve plain or with vanilla ice cream or real whipped cream.

CHOCOLATE CHIP CHEESECAKE SQUARES

Busy Day Cobbler

1/3 cup butter
1 cup flour
1/3 cup sugar
2 tsp. baking powder
1/4 tsp. salt
2/3 cup milk
one large can sliced peaches with liquid
1/4 cup additional sugar
1 Tbsp cinnamon

Melt butter in 8 by 11 inch baking dish. In bowl combine flour, 1/3 cup sugar, baking powder, salt and milk. Pour over butter but do not stir. Over this pour sliced peaches (liquid included, but not all of it - I usually leave about 1 inch of liquid in the can, if you pour in all the liquid, it's too much)
Sprinkle peaches with additional sugar and cinnamon. Bake at 350 degrees for 45 minutes. Good served warm with ice cream.

Stir together remaining ½ cup granulated sugar, brown sugar and remaining ¼ cup cocoa; sprinkle mixture evenly over batter. Pour hot water slowly over top . Do not stir.
