There's adding bacon, or tomato, or black pepper on it, but I'm looking for something different, or a good cheese combination. Any suggestions?

Mozzerella slices (add fresh basil to your tomato soup)

Swiss, plain or maybe a Reuben with corned beef and saurkraut and 1000 Island.

Manchego (a very light nutty-buttery Spanish sheep's cheese DEE-LISH)

Brie might be good.

Feta with olives and prosciutto for a Mediterranean treat.

Cream cheese.

Any deli meat, feathered ham or turkey, or roast beef, or all three for a grilled club.

Grilled PBJ, no cheese but make the same way...or peanut butter and Nutella, or cream cheese and Nutella...or just grab a spoon and eat the Nutella straight from the jar. I know not a grilled cheese idea at all but it always hits the spot for me.

You can do grilled ham/tuna/chicken salad with cheese. Cook on higher heat to keep the salad somewhat cold and brown the bread fast if that is your taste. Personally, I like the contrast of hot and cold in certain things.

You can make any grilled sandwich lower in fat by making dry toast first (in a toaster), make the sandwich, then microwave it for thirty seconds. I love to do this with scrambled eggs and a slice of American.

You can change up the oil you make the sandwich in...instead of butter, use olive oil, sesame oil, peanut oil, or any infused oil.

You can make it with different kinds of bread, sliced thick on the diagonal for a pretty sandwich. I love sundried tomato with basil bread, also rosemary bread.

You can use a grill pan to make more of a panini...with the lines on it.

You can dip it in something besides ketchup. Ranch or any salad dressing, BBQ sauce.

How about a Croque Madame? It's the French grilled cheese sandwich. I just butter bread, throw in some ham or sliced chicken, some of my favorite cheese like Fontina or Port Salut is yummy, and dip the whole thing in scrambled raw egg and fry it. Then once it's cooked, I top it with a fried egg. Some people put a white sauce on it but I don't. White sauce is made from flour, butter, cream, and salt.

Last answerer about the Biblical image had a good idea.

Someone made a full sized reproduction of the Last Supper in toast! It's at the Ripley's Believe it or not museum.

The way the artist did it was by selectively toasting using a propane torch. You can use a propane torch to make designs on the toast for the wow effect.

Otherwise, inside, make a custom pesto recipe and add to the grilled toast.

Well, I think if you add any meat to a grilled cheese then it is no longer a grilled cheese it would be called that meat with cheese.

So, I try this. Make your grilled cheese. Then take the grilled cheese sandwich and dip it in seasoned flour and then deep fry the sandwhich and you will have a deep-fried grilled cheese. So Good.

I saute thinly sliced onions, green peppers and mushrooms with olive oil and a little garlic and put it ing the sandwich after grilling it. (carefully pull the bread apart while the cheese is still hot and spread the veggies on) OMG, it's SO good. It's good with american cheese, but BEST with a slice of Colby and a slice of Swiss.

I like to take Breadsticks and wrap them with Swiss Cheese, then bake them. That could be considered as an alternative to your traditional "grilled cheese". It is using bread and cheese, just in a different form.

Use large cookie cutters to make shapes out of them. Kids love those dinosaurs, eating them head first of course.

I personally just add mustard to mine for a kick. I have on occasion grilled some onions and peppers and added them to the sandwich.
Or try anything you like in a pizza like pepperoni or a grilled pineapple slice and grilled ham with a little ketchup or pizza sauce if you have it.
