I used to shoot at a gun club in Camillus, NY. It's called the Camilus Sportmans Club (the town is the home of the famous Camillus kife company) Anyway..every Thursday night when we shot we had a cookout and we all had to bring fish, deer, elk, beer, moose..whatever we had in the freezer or from a recent hunt. The black bear we had was awesome. We had burgers made of it and it was unreal. Really can't compare it to anything.
Just a little sidebar ...animals ARE what they eat. The hunts we went on and the game taken were in remote and WAY off the beaten path. I seriously doubt our bear had eaten anything but running fish and carrion and were no way consumers of garbage, fast food leftovers and the like.

It really depends and I am surprised no one has said anything yet. Spring bear tastes much better than fall bear. I am not sure why, maybe it's because the system has been cleaned out, but it does taste much better in the spring. With one exception though, bear fat is unbelievably good for making pie crust. Once again I am not sure why, but if you want the best pie crust ever, take your bear fat and use it like criso. good luck! I guess the final answer though is that bear isn't anything special, always be wary of any animal that people tell you, "yes, if you season it JUST right".

I have eaten it. I am going to give you a rule of thumb when you are eating meats. Then I will let you answer your own question.

Think of what the animal takes in and that is basically what you are eating.

cows- eat grass and grain...I LOVE BEEF
Fish- whatever they eat doesn't have much flavor
Now,
Bears- are scavengers, they will anything that isn't locked down and some of what is locked down too. Mostly garbage, rotten meat, and many other very appealing things.

You decide...my vote no bear meat unless you are really hungry.

Bear when cooked right is quite good.. just like any other meat really.. Bass Pro Shops offers some really good recipe books! Also try www.canadaintherough.com and get some recipes from the chef on the show.. he has some really great recipes also a really great show! I think the best meat I have ever had is caribou.. just FYI if you get a chance to have some.

Not very fond of it, I have had both good and bad bear. But on a consistant basis I think the burger is the best way to have it

Bear isn't the best...I like Elk and Buffalo much better...Also really good but they sound a bit odd, Moose nose and Beaver tail...

Go to a wildlife dinner sometime, they have anything and everything...Our local VFW post has one every year...

Yes! If it is seasoned, Marinated right. A lady I know hunts bear
and she brought some into work once for a pot luck and It was
delicious! I'm not sure what she did to it but it didn't taste gamey
at all.

I used to eat it pretty frequently growing up in northern NY, its very good in burgers, roasts, smoked, it can be a lttle gamey depending on how its cooked though

bears are beautiful animals, how could you even think of killing it, let alone eating it!
