Cornstarch Substitute

For 1 tablespoon, use 2 tablespoons all-purpose flour; 1 tablespoon potato flour or rice flour; 4 teaspoons quick-cooking tapioca; or 2 teaspoons arrowroot.

I have used the flour before, it works well!

Depends on what you're doing. In some things, wheat (white) flour is acceptable. Guar gum or modified food starch work in others. Some things are just better with cornstarch.

I use flour dissolved in a 1/4 cup of water. That way when you introduce the flour to the hot ingrediants it doesn't lump up.
