Tilapia and baked with lemon and pepper. It goes great with sauteed spinach and rice.

Barbecue Roasted Salmon
1/4 cup pineapple juice
2 Tbsp fresh lemon juice
4 - 6oz. salmon fillets
2 Tbsp brown sugar
4 tsp chili powder
2 tsp grated lemon rind
3/4 tsp cumin
1/2 tsp salt
1/4 tsp cinnamon
Cooking spray
Lemon wedges (optional)
Combine first 3 ingredients in a ziploc plastic bag, seal and marinate in refrigerator 1 hour, turning occasionally.
Preheat oven to 400°F. Remove fish from bag; discard marinade. Combine sugar, chili powder, lemon rind, cumin, salt and cinnamon in a bowl. Rub over fish. Place in an 11x7” baking dish coated with cooking spray. Bake at 400°F for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon, if desired. Serves 4.

This is the easiest and best tasting way to cook fish, this is best with a flaky fish such as haddock or cod. Dredge the fish in flour, saute it in a pan with a little oil. When fish is browned on both sides put in warm oven to hold. In a new pan put a pat of whole butter in and put it on med-high heat. You want to slightly brown the butter (do NOT over heat butter). When butter is browned take fish out of the oven and sprinkle fresh lemon juice over the fish and then the butter. (Be careful... the butter and lemon juice will foam up when they come in contact with each other). Serve at once, this sounds very basic but I guarantee it will be one of the best tasting dishes you have ever tried!

Salmon-Put on foil, put a little seaoning salt, small amount of butter, and a few slices of lemon, wrap in foil, and bake at 350 or grill until fish flakes easily. Scrumptious, especially if it's fresh, wild caught Salmon, preferrably from the Pacific!

Catfish, rolled in corn meal and fried, or in a crispy batter and fried.I just buy one of those batter mixes Must have hushpuppies and cole slaw with it, a little tartar sauce on the side. And a big icy coke, diet or regular.
Love river fish.

I'm lucky there not that expensive over here (the Netherlands) so I can give in to that addiction.

My favorite is salmon! my mom usually bakes it in like lemon juice, and then she makes a really good tartar sauce with like mayo, red pepper, pickles, lemon. I am not sure what else, but it is Amazing!

I love any kind of fish seasoned with tomato, chive,, celery (any freshly chopped green seasoning), onions and steamed in garlic butter- hmmmm, yummy!
